  • Fresh horseradish

    Hi everyone. Yesterday my Dad gave me two fresh horseradish roots from his garden. They must have been at least 18 inches long each. I cleaned them up good, cut out any bad spots, sliced them and put them in my blender with vinegar. After they were processed I put them in wide mouthed pint jars and added 1/2 teaspoon salt, and 1/2 teaspoon garlic powder. I had to have a taste test of course. Let me tell ya, it is some potent stuff! I had myself in tears 3 different times when I would take the lid off the blender to stir the contents. I can understand why the workers in the plants where they process that stuff wear gas masks now! I got to good full pints out of those two roots. I'm planning on using it on any kind of beef. Husband and I both love it on beef. Still working on getting beef for my freezer too. I just wanted to share that with my pals here on the forum.

    Wow! Love horseradish. Sounds potent! I bet it's deeeeelish! Did you know horseradish is the whooshie ingredient in whooshie pie?

      I'm growing a horseradish this year!!! It's almost 2 feet high.

      I had an aunt who used to rub a roast beef with freshly grated horseradish before roasting it. It had a marvelous aroma and taste.

      I remember reading a recipe book that said if you want the horseradish to be spicier, after you mix the horseradish with the other ingredients you cover the dish. That traps some of the essential oils/compounds that make the horseradish sauce spicier. I don't know if that really works or not.....

        I had no idea about the whoosie pie. I also had no idea about covering it to keep in some of the zip. Mine should be plenty zippy then, because I sealed them up in pint jars...lol

          We always make horseradish on the back porch with a fan blowing out.....I love the stuff but it's not something you want to get in your eyes!!!!! Sounds like you had a fun day!
