  • flaxseed cookie questions

Okay, so I am going to make this recipe:

    Sugar "Cookies"

Except I will be using all splenda instead of erythritol, and instead of almond flour, I am using milled flaxseed. Here is the link to the nutrition info:

    Milled Flaxseed

My question is...how many net carbs will be in each cookie all together? If net carbs is carbs minus fiber, does that mean that the flaxseed has no carbs?

    Thank you!

    Re: flaxseed cookie questions

The carbs in flax meal are said to be zero just because they are below 0.5 g per serving. But flax does have some carbs.

In 20 tbsp of flax meal (1-1/4 cups), there is approx. 10 net carbs according to CalorieKing (50 total carbs, 40 fiber). You are only allowed 1 tbsp of flax meal per day, unless constipated, so you can't eat more than 1 cookie. Also, each cookie has 1 serving of Splenda if you use only Splenda (1 cup). So even if you are constipated, you can't eat more than 3 servings (and that is assuming you don't consume sweeters from any other foods).

Oh, yeah I forgot...would it be okay to put some cream cheese on it?

I made them smaller than the recipe called for, so I think I should be in the clear

Since you are on Induction, you might want to reconsider "feeding your sweet tooth". I've seen too many people fail because they have fed that sweet tooth. See the more you feed it the more it will want.

              Hi!

I am in OWL and am doing ... well ... ok. My continued weight loss is very, very slow. Along with drinking tons of water and following wonderful, satisfying recipes, I just started exercising 3 weeks ago (I know, I should have started the same time as starting this new lifestyle) and am actually feeling pretty good about my slow progress. Hey, progress is progress!

ANYWAY, I tried to go to the link provided above and it didn't work. Would it be possible to either send me the link directly or re-post it here? It would be greatly appreciated!

fyi - I am NOT a sweet tooth-type person, but an Atkins friendly cookie every now and again sounds kinda good!

              Thanks bunches!

Below is the recipe that used to be at www.lowcarbluxury.com.

                Old Fashioned "Sugar" Cookies

                Ingredients:

                1 1/4 cups almond flour
                1/2 cup Splenda
                2/3 cup erythritol *
                1 egg
                1/2 teaspoon butter flavored extract
                1 teaspoon vanilla extract
                1/4 cup unsalted butter, softened
Diabetisweet or granulated maltitol, or erythritol

                Preheat oven to 350°F.

Mix almond flour with Splenda and erythritol, sifting until well mixed. In a separate bowl, lightly beat egg and then mix well with extracts and softened butter. Add to dry ingredients and mix really well.

Form dough into 24 small balls and space evenly on two ungreased cookie sheets (most cookie sheets will hold 12 cookies — 4 rows of three — very evenly.) Press moderately to flatten to a silver-dollar pancake size.

Sprinkle cookies with granulated Diabetisweet or granulated Maltitol, or Erythritol, just as you would traditional "sugar" cookies. Bake for approximately 8 minutes at 350°F. They will slide right off the cookie sheet. Cool 5 minutes before eating.

These cookies are the best cookies I've had since low-carbing. None of my non-LC friends can tell these are not "the real thing" and they go like wildfire at a party. Be careful, they're addictive!

Makes 24 cookies. 1.8 effective grams of carbs per cookie.

                * NOTE: If you don't have Erythritol, they can be made with 1 full cup of Splenda. Cookies come out to 2.3 effective grams of carbs per cookie that way.
Since you're on OWL Rung 1, almond flour is not allowed yet. Flax meal doesn't behave the same as almond flour in recipes.
