    Hi

    Im looking for tried and tested recipes using coconut flour. Ive found a bread recipe which im going to try out, i just wanted to know what else i can use it for.

    Im going to have to get myself a grinder, so i can grind my own flour and save myself a few pennies!!

    do you just use regular coffee grinders to do the job?

    unfortunately, coconut flour is not just ground dried coconut...but the defatted dried VERY finely ground byproduct of coconut oil pressing, making it very high fiber (and hard to work with).

    a google of coconut flour recipes will net you some recipes to start with, I can recommend elanas pantry (google again, sorry can't post it) -- she mostly works with finely ground almonds but has started coconut flour experiments that look really good, blueberry coconut muffins and a chocolate cake (they're both on my to-do list). she specializes in gluten free so you'll have to sub the sweeteners (she uses mostly agave nectar, high in fructose).
