  • flax meal help!

    i tried to make a one minute flax muffin, i followed the recipe and it came out bitter and nasty, and then i tried an instant bun it also tasted bitter and it came out GREEN! i followed the recipe and it did not look like the picture, in the picture it was brown and looked nice and a decent size, mine was this small green blob.

    can someone give me a better recipe or tell me what i can do to make it not taste so bitter, or maybe its just my taste buds

    Anyway, it's probably good that they didn't turn out nice, because the 1-minute muffin is not allowed during Induction unless you are constipated and smaller amounts of flax didn't help. As a daily fiber supplement, flax is limited to 1 tbsp per day.

      I haven't made either of those but I remember from past attempts at low carb baked goods that they weren't that good. Most were pretty much like hockey pucks. I think the major problem were the words "muffin" or "bun" or "cookie." My mind (and my taste buds) expected the regular bakery stuff. These were not close. Not at all.

      I don't know if I'll even try again with the Atkins versions. Even tho'...those Revolution Rolls and Oopsie Rolls look interesting. There is a post somewhere on ADBB with a link where the woman made Oopsie everything. The pictures looked good.

      Right now I'm only a week out of Induction and I'm not looking for faux baked goods. I need to break the connection between meals with bread type things...even if they are "fake."

      Sorry for the ramble there. I don't know if you did anything wrong with your recipes. Carole (Imagood1) mentioned that hers turned out green and she was put off by that. Ya think??? I would be too!
