CRAPPY! I did that Best cheesecake recipe and I must have done something wrong. It came out fluffy and then fell flat after about 3 minutes; and it was more than cakey but severly dry. It also browned more on the sides before it ever started to brown on the top. Can anyone explain what might have happened and how I can re-do this to make it better?

Can you post the link to the recipe? I am not familiar with that specific recipe, but all of my cheesecakes (low carb and regular) have turned out very nicely. Cheesecake usually doesn't "brown" -- so maybe you overcooked it? I typically bake it in a water bath to help ensure that it stays moist and cooks evenly. The only 'browning" I've ever had on a cheesecake was maybe some brown spots on the top.
I went to the recipes section here to see if I could find the recipe you referred to or one that is similar to what I use, but I couldn't find either!. Let me know!277/180/160ish -- started 7/28/03 --F

All my cheesecakes turn brown (or gold, as you wish) and the usually get down a little after baking them. I don´t know any cheesecake which doesn´t get down a bit.

They all "go down" a bit in the middle. I often make them in minimuffin pans and can then put a little SF jam or a couple of berries in the "indention" at the top!
I think mine don't brown as much or get as dry because a I use the water bath -- I also do this with quiche. The water bath makes the oven more steamy, so you get a different kind of result.
