  • Octopus (pressure cooker)

    (not opossum)

I have one in the freezer. I´ll cook it this week and post the picture. It´s very common in north Spain: "pulpo a la gallega". It´s boiled and served with Maldon salt, paprika powder and olive oil. DELICIOUS!

I think I should dedicate the post to MoG´s BF .... to know what to do next time an octopus attacks him :guns

      "Pulpo con ajo y aceitunas"
      "Pulpo con salsa de limón"

Galicia is a part of North Spain. The way of cooking this octopus in Galicia is octopus "a la gallega" (gallega´s way)
I´m sure you´re going to love it :nod
Will post the pictures and the entire recipe next week :nod

YIPPEE! I really can't wait to see this recipe and pictures! I love octopus! And we are planning a trip to the coast next month to do our annual fishing trip and hopefully we can bring home a couple of those babies and I can try Pau's recipe! :joy

I'll tell John about the dedication too! He'll love it!

            As promised!

First we boil the pulpo (=octopus). No water and no salt in the cooker. Just the pulpo:

            After 8 minutes .... it´s already cooked:

            Look all the pulpo´s water!

Cut in pieces and serve with olive oil, maldon salt and pimentón (paprika). ENJOY!

Looks good. But you don't really need a pressure cooker right, you just boiled it? and what is maldon salt please?

The thing is ... you don´t really NEED the pressure cooker because everything you cook there you can cook it in a normal pan! but of course the time is normally less. That´s why I love it!

"What Makes Maldon Sea Salt So Special
The pyramid-shaped salt crystals, characteristic of Maldon Salt, are fragile enough to crumble easily between the fingers and have a totally different taste from the regular grains of table salt. It is an interesting exercise to taste common salt alongside Maldon Salt. The common salt sits uncomfortably on the tongue and has an underlying bitterness. Maldon Salt is milder, has the flavour of sea spray and is free from the chemical tang of common salt. Unlike most salts containing additives to stop them caking in damp weather, Maldon Salt is a completely natural product, retaining valuable sea water trace-elements"

OK, what I meant about the pressure cooker is did you use it as a pressure cooker for this recipe, or did you just use it like a regular pot, I'm confused because you said "boil", did you put the top on it and actually pressure boil it?

Thanks for the info on the salt. I know I can get sea salt easily, but not sure if I can get that specific one here.

Ooooooh! O.K., Thanks. I thought you just boiled it for 8 minutes. Now I understand!

I still have to get myself a pressure cooker! We went to Walmart the other weekend, they are remodeling our Walmart to turn it into a Super Center and we were unable to locate the pots and pans! What a mess that place is right now. May try again this weekend while John is working, he has no patience when it comes to shopping so if I go alone I may be able to find one! I am dying to try these recipes!

I LOVE the pickled one--they make a cold pickled octopus salad in Japan that I adore although I have never made it myself
