  • Question about cooking (stuffed) jalapenos

    I've made stuffed green jalapenos (with both hard cheese and cream cheese). The filling always tasted good. The jalapeno, however, tasted more like a bell pepper instead of a jalapeno. That made it kind of yucky. I've had "poppers" (pre-Atkins) and remember the jalapeno, even though breaded, did not taste like a bell pepper.

    Any suggestions?

    Hi Lisa,
    I can tell you that when growing Jalapeno's , the heat factor is closely linked to how much water they get. And when selecting them at the store, often the ones with fine lines along them (not quite cracked) are usually the hottest too. So what you may have bought is some Very Mild peppers.

      Thank you Kntrylady. I never knew that. I will keep that in mind the next time I get jalapeno peppers, good thing to look for when I select them.

        I'm getting anxious to make the poppers....my husband brought a dozen jalapeno peppers so I'm going to make them possibly tomorrow.

          Ok, I'm officially a wimp....I made the Jalapeno Popper recipe from Linda's site this morning and absolutely couldn't get them swallowed....they were too hot! I'm still on fire and I took my 1 bite almost half hour ago....guess I'll have to put the rest of them in fresh salsa.

                Thank you Miss Phode! How funny that they compared a non spicy jalapeno to a bell pepper too. This is definitely going to help when I get more jalapenos

                    I'm doing good, thanks. A little heavier than I was a few years when I was on ADBB. But I'm back and glad to be doing the Atkins WoE!

                      Got some jalapenos to make my stuffed peppers again, and this time I took everyone's advice about getting the slightly wrinkled/lined ones (rather than the waxy flawless ones).

                      Just tasted one and

                        Talk about timing. Cooks Illustrated just had an article regarding the corking (white lines) on jalapenos and the Chile Pepper Institute spokesperson from NMSU stated that corking was merely a genetic trait and had no bearing on heat. I usually trust CI (and NMSU regarding all things chile) and am surprised to hear they may be wrong. Time to go find some corked jalapenos and run a trial!

                        If I want my 'penos hotter, I always just leave more rib and seed pith in them since that's where the capsaicin is.

                          I'd be dead meat if I left any of the seeds in. I made 4 jalapenos stuffed with cream cheese...I wimped out after the third one and ate just the cream cheese.

                            Oh, I've regretted not getting every bit of rib and pith out of some a couple times recently. And I've been eating chiles since I was a toddler. For some reason, there was a run for a couple weeks during the last month that the grocers around here got shipments of unusually hot jalapenos. I chalked it up to stressed out chiles due to being from the tail end of the US season. Don't know if that's the correct assumption. And none of them possessed corking.
