    I was hoping some of you LC baking experts could help me out with a question. I love to bake and would like to make some really great desserts for the holidays that I could enjoy along with my non-atkins family members. I like a lot of the recipies here, but when a recipie calls for splenda, I don't like the weird sweet aftertaste. For example, I tried the PB cookies last week and thought the taste and consistancy were great, but they left a weird "splenda-y" taste after.

    I do a few of the 1 cup microwave things like pumpkin flax muffins and the chocolate cake, and have found that 1 pkt of splenda and 1 pkt of Truvia (stevia and erythrol) make it just right with no aftertaste, but I'm not sure about converting to a whole recipie that calls for , say a cup of sugar or sweetner. Anyone have a good conversion for a cup of sugar? I have in the house: liquid stevia, powdered stevia, sweetfiber, granulated splenda, pkts of splenda, pkts of truvia, and pkts of sweet and low. I's also go buy anything I needed but I don't do anything with aspartame in it.

    There should be a conversion chart showing amounts of stevia for given amounts of sugar at www.sweetleaf.com. They recently changed their website, but hopefully it's still there. They may have some good holiday recipes using stevia as well.

    Actually, I just baked peanut butter cookies this morning using SweetLeaf stevia and they turned out well! Of course, I have the luxury of having a cookbook of stevia recipes, so I'm given the stevia measurements in the book.
