  • Cheesecake HELP!!!!

    Okay, so its almost 6 o'clock the night before Thanksgiving and I'm supposed to be making a low carb cheese cake and I JUST realized I'm out of vanilla extract. I'm using the gelatine recipe that's on the box only substituting sugar for splenda. Does it NEED the vanilla extract? Is there anything I can substitute for it? (I have almond extract, lol). I really don't want to go back to the grocery store and stand in the long lines with all the last minute shoppers.
    1st Goal ~ 199 Onderland -Met 3/29/10
    2nd Goal ~ 174 No longer obese
    3rd Goal ~ 150 In the home stretch
    Final Goal ~ 145 or below (I'll know when I get there) No longer overweight

    Current Mini Goals:
    1) 35 pounds lost
    2) 40 pounds lost to move to Rung 5
    3) 45 pounds lost to update 15 pound loss picture series

    I think almond would work! Good luck. Let me know how it goes.

      Almond is VERY sweet ... it might not be the taste you're looking for. You might try using less than the amount of the vanilla.

        Hey Barb !! I feel your pain, I hate it when I forget an ingredient. I have a little quick store 18 miles down the road, and the next is 45 miles.
        I haven't tried making cheesecake with other than vanilla, but have thought about trying lemon extract, orange extract, etc just to see. If you have some extra creeam cheese, how about taste testing a tablespoon with a drop of extract and a drop of sweetner to make sure you like the flavor? Let us know how it turns out. I bet the almond would be delicious.

            Thanks for all the suggestions, I ended up calling my mom and she had some, so it was only a 10 mile round trip drive instead of 30 and no line, lol.
