withut the starch to old it together what can i use as a binder for califlower pancakes/patties/;latkes? would xanthan gum work?

binder for cauliflower pancakes/latkes?
i'm 25 years old, mom of two, ready to do this once and for all!
note: i am breast-feeding, though my baby is nearly weaned, eating most solid food now. i am doing this diet with the knowledge, approval, and at the suggestion of my doctor and having done my homework. i will not discuss the matter in any of my posts. please don't bring it up. -

I do believe most pre-maintenance folks rely on egg as a binder when making latkes. At least I do. And maybe a higher ratio of cheese? You, however, eating at maintenance levels could easily do half cauliflower/half potato and still enjoy having potato starch as a binder. I use to do something similar to that with mashers back in the day when I was in maintenance myself.191/180.4/175/140

of course i use eggs, but it still falls apart wen frying. i cat add cheese. my daughter is allergici'm 25 years old, mom of two, ready to do this once and for all!

The cauliflower may need to be chopped finer. Do you use cooked cauliflower for your pancakes? If so, it needs to be blotted dry with a paper towel before cooking up the pancakes. I've never tried cauliflower pancakes...I use shredded zucchini (blotted dry) and beaten egg. They stick together fine.
The only other thing I can think of is maybe you are flipping them too soon. They may need more time cooking so the egg has cooked sufficiently to keep the pancake intact.
