  • Veggies for folks who hate veggies

    These are three veggies that I really think you will like and maybe even love. Give them a try and then let me know what you think.

    Jicama - You may have to ask someone in the supermarket where these are but all major supermarkets should have them. If not try Mexican Markets in your area. They are tan in color, tight skin and no major discolorations or wrinkles. When you get it home, peel away the skin, its really fiberous and may just need cut it off. Flesh is white, crispy and great in salads. Or try it sliced with a sprinkling of lemon juice or lime, some salt and if you like chili power.

    Black kale (Calavo Nevo) I don't find this kind of kale around but when I do, I buy it up. The leaf is curly like the green kale, but thinner. Wash it, cut off the ends of the stems if needed. Heat some olive oil in a pan with a little garlic and a little water. Steam it for a few minutes. Serve with a dab of butter

    Kabocha This one is going to take a little more cooking than the others but worth the effort. You can find it with the winter squash and looks like a green striped pumpkin. Cut it in half, take out the seeds and then slice it into 1" slices. Season with salt and pepper and olive oil. Roast it in a 450 degree oven til soft.

      Winter squash isn't generally an Induction vegetable though.

        But pumpkin is and in this case it is considered pumpkin not squash

          Got it ... it was confusing when it was called "winter squash".

          This seems higher than the net carb count for pumpkin, too.

          I'll have to look for it ... it may be at the grocer's and I didn't know what it was.

            My DH hates veggies and is a picky eater. When I make a new dish, I don't tell him the ingredients until after he decides whether he likes it.

            For example, I made the fried "rice" using grated cauliflower and he loved it. I told him later it was cauliflower and he was like "you serious?!" ROFL!
