i tried making thewm tonigt and those that werent underdone or burned were great but how do i get them to cook evenly? they go from done to burned before i can get i ot of the oil.

I moved this thread from the Side Dishes Recipes forum to here because it isn't a recipe. You should be getting more advice concerning jicama chips here.
Personally, I've never been able to make jicama crispy (without it burning). I've had better results at making potato chip like snacks from celeriac/celery root and pumpkin (fresh pumpkin, not the pureed stuff in a can). Both celeriac/celery root and pumpkin are on the Induction Acceptable Foods List.
If you do a search of the recipes forum, you will find a thread I posted about these celeriac/celery root and pumpkin chips.
