I personally really dislike grating cheese...I just don't like doing it...that is one thing that I use my food processor for regularly.

Measuring cups, spoons and a scale are high on my list of "should haves".

New you, new stuff. I understand perfectly.

Twelve hour shifts are tough. Remember to bring yourself emergency food and eat at least every 6 hours. One of the biggest hurdles of this plan is when we get hungry and we are surrounded by carbs. It's just so easy to grab on.

When you go to the store, have plenty of time, especially if your new to low carb'ing. Read lables to include ingredients. You will find that all you need is around the outside walls of the store. Veggies, meat and eggs/cheese. Rarely have to go down or up at all.

        Blender vs. Food Processor

A blender will puree food to a smoother consistency than a food processor. So you want a blender to make creamy soups or sauces. I have a food processor and the only thing I use it for is to make pie crust for my non-low carb friends and family.

If you want to use your food processor to chop, slice, grate foods, be aware that the time to chop/slice/grate is faster than if you used a knife or a box grater, but a knife and cutting board are faster to clean than a food processor.

I agree with the food scale, measuring cups, and measuring spoons. They are essential if you want to follow a recipe.

You want to use craigslist. They sell everything, from food dehydrators to yogurt makers to food processors to fancy blenders, and all for a fairly reasonable cost. Plus, you get to meet some nice people in the process. I love the Craigslist community.
