  • Superbowl Quandary!?!?

    We're hosting a Superbowl party, and I need some ideas for eats. Suggestions, please! We were thinking of serving fried chicken wings, with celery sticks, carrots and homemade mayonnaise. Our guests will be bringing chips, dips, and dessert (none of which I will have, but I'm good with that.) Any other ideas for good eating?

      Oh yeah! Deviled eggs! Yummy! I love deviled eggs, and I know they do too.

        jalapeno poppers. fresh jalapenos stuffed with anything, cheese, I like to get crab meat and mayo with some shredded cheese and stuff them they are delicious then bake. Little Smokies, have like a veggie tray for yourself and some others with broccoli and cauliflower and some peppers. Homemade guacamole ( eat with pork rinds or crispy chicken skin), cheese balls, and meatballs! lots of different items can be low carb!

          Poppers = Yummers! I think everybody we're inviting (except one) likes hot things. Poor guy, he can't even enjoy a good bowl of chili.

            Portobello Pizza's, take a portobello mushroom, take off the stem, cheese, toppins ( sausage, pepperoni), it is so good. The recipe I used was on Linda's recipes.

                Cut the jalapeno's in half and scoop out seeds and membrane. You may want to use gloves for this. The heat is in the membranes and seeds so if you want it hotter then leave some in. Set aside.

                Mix cream cheese, aged cheddar cheese, garlic and onion powder together. Stuff into the jalapeno's. Microwave bacon for a couple of minutes just to speed up the crisping process. Then take a piece of bacon and starting on the bottom wrap it around the jalapeno. You should end on the bottom as well. This will help hold the bacon down.
                Do the same with the rest. Set on a cookie sheet (put tinfoil down for easy cleanup). Bake for approx 15 min at 350 and then broil for 1-2 minutes...watch carefully. Enjoy!

                  You mentioned fried chicken is that home made. Or can you by fried chi Ken from the store. Or do they use breaded outside. I always thought you can eat but that's why I'm here

                    We're serving tacos--make your own, along with veggies with spinach-cheese dip, roasted chicken and oven baked ribs. I'll have some Revolution Rolls made into small ''cinnamon and Splenda cookies'' for dessert served with whipped cream and strawberries.

                            don't have the recipe handy right now, but you could probably google it. There is a magnificent dish called buffalo chicken dip. It is to die for.

                              Here's the recipe. I use chicken breasts rather than canned chicken.

                              Ingredients
                              • 2 (10 ounce) cans chunk chicken, drained 2 (8 ounce) packages cream cheese, softened 1 cup Ranch dressing 3/4 cup pepper sauce (such as Frank's Red Hot Sauce 1 1/2 cups shredded Cheddar cheese Serve with celery or for non-lowcarbers crackers.

                              Directions
                              1. Heat chicken and hot sauce in a skillet over medium heat, until heated through. Stir in cream cheese and ranch dressing. Cook, stirring until well blended and warm. Mix in half of the shredded cheese, and transfer the mixture to a slow cooker. Sprinkle the remaining cheese over the top, cover, and cook on Low setting until hot and bubbly. Serve with celery sticks and crackers.
