  • Take one fresh chicken....and....

    Ok Pau gave me an idea!!!! Chicken is still pretty much a good deal and good for you ..I do buy free range hormone free organic chickens and yes I know there is a controversy about it being any better....I like the taste ,think it cooks better and find the idea much more appealing ...so with that idea you get one chicken...a whole chicken and you must cut it up and prepare it.....so what would you make?......please share your process and recipe!...I would make one of my favorites

    Easy Chicken Cacciatore

    1 cut up whole fresh chicken
    Kosher salt and freshly ground black pepper
    a good splash of extra-virgin olive oil
    1/2 teaspoon crushed red pepper flakes
    1/2 lb fresh mushrooms
    4 cloves garlic, crushed and minced
    1/2 cup red wine
    1/2 cup beef stock
    1 (28-ounces) can crushed tomatoes
    A good handfull of fresh Italian parsley, chopped

    Get your favorite deep skillet hot over medium high heat. Add half of the extra-virgin olive oil and brown chicken pieces for 3 or 4 minutes on each side get a nice brown on them. Remove chicken from pan and season with salt and pepper.
    Return pan to stove, reduce heat to medium and add some more oil the garlic mushrooms.. Season with salt . Cover and cook until the mushrooms are nice and dark and all the juice is out of them remove the mushrooms place with the chicken....add the stock and wine and reduce again down to about 1/3 cup liquid. then add the tomatoes and cook until thickened and the oil comes to the top of the sauce... reture chicken and mushrooms to the pan..... Simmer sauce 5 minutes to finish cooking chicken pieces and to allow the flavors to combine. Top with freshly grated romano or parmasan cheese.

      I found a recipe for tea-smoked duck. But I figure, I can easily substitute a chicken for it. If the weather is nice this weekend, I'll try it on the outdoor grill.

        Megs I have done a tea smoke and used the Thai tea to do it ...it was amazing ....hope you enjoy it...I love a well prepared duck better than any poultry and tea smoking it is perfection to me!!!!.....I am sure this will be very good on the chicken as well!.....please let us know!

          Coconut chicken...yummmmmm

          1 fresh chicken cut up
          1 fresh coconut hulled water (set aside for soaking the chicken in)
          3 tb sour orange juice (or lemon or lime juice)
          2 large eggs -- slightly beaten
          1 1/2 teaspoon salt
          1/2 teaspoon pepper
          pkg of Sazon' con Azafran
          hot chile to taste
          veg oil for frying (you could use a deep fryer
          beat the eggs with the coconut water and the orange or lemon juice half the salt and half the peppers put it all in a bag and let sit while you do the rest....

          grate the coconut in a food processor if you have one or on a grater (watch knuckles) on a small blade to make coconut like breadcumb sized



          In shallow dish, place coconut and rest of seasonings
          Dredge chicken, first in egg mixture, then in coconut, pressing to coat well. let dry in frig while you prepare the rest of your dinner at least 20 min
          In large non-stick frypan, place veg oil over medium heat.
          Add chicken and cook browning on all sides turning as little as possible

          or even better put melted butter in oil in large shallow baking dish turn once to get the butter on both sides of the chicken then bake at 400 degrees turn after 15 min or watch if your oven is not true....turn and cook another 15 min or until done and nice and brown....

              You know the funny about thing about fresh chickens, I think they are nasty.

              I've raised chickens, turkeys and collect daily eggs, but every chicken that DH or sons have ever dressed, is just foul. The meat is tough and stringy, not matter how its cooked, and it tastes funny. I don't like fresh dressed chickens, said SAM I AM.

              But I do like chickens that I buy at the grocery store.

                get one can of beer or a citrus low carb soda.
                open and pour 1/2 down the drain. wash chicken and clean out inside.

                place can open side up in a shallow pie pan sit bird on can and place either in indirect heat on grill or in oven set on 225

                cover and slow cook for 90 min the birs will self baste from the inside with the flavor of the liquid steam.

                outside of birs should be crispy golden brown and inside time 190 when done. if skin not brown move over to direct heat side or turn oven up for 15 min on high.

                Allow bird to sit when removed from oven on can for 20 min then carefully remove can and cut chicken for eating.


                I loke to add herbs to the can sometimes too


                tests were done on the paint of the cans to see if it was safe for this cooking process and the fellow on food tv giving the recipe said it passed the testing and no chems were leeched to the meat.

                        well as long as you don't leave it in the can is all cause it will boil over and not steam the chicken with those lovely vapors.

                        I have used that black cherry hansens too and a raspberry one and a tangerine one. I don't drink but we did it with a wine in the can but folk said the beer one was better.


                        if you grill it since you have the grill going grilled asperagus goes great with this as do grilled mixed veggies.

                          really easy ...take one fresh chicken cut it up then take sage garlic fresh cracked pepper kosher salt and unsalted butter make a paste shove it under the skin and rub it all over the chicken then roast at 350 until done!!!
