We don't eat salt (DH has HBP), so it takes very little salt to taste "salty" to us. I guess I'll just start "weighing it down" without putting any salt on it. I haven't had time to buy kosher salt, since I understand it doesn't "soak in" as much.

    Any tips on this?
    You can salt the eggplants, weigh them down and let them drain, then rinse the salt out. The salting leaches out the water and changes the cellular structure of the eggplant such that when you rinse them back off again afterwards (to get the excess salt off) they won't just suck the water you use to rinse them back up.
