  • Induction Friendly No Bake Cheesecake?

    Does anyone know of a good recipe for an Induction Friendly No Bake Cheesecake? Tommorrow is Easter and I am looking for something that my son and I can actually eat for a Dessert. Since we have both just started Atkins today, I do not wanna blow it right off the bat.

    I have lots of diff flavors of Sugar Free Jello, and Cream Cheese, Lemon Flavoring...etc in stock. Can anyone come up with something suitable and tell me about how much of it I should be able to eat for one day. Thanks so much!

      Thanks! I found one and didnt plan on "bellying up" to the cheesecake, just wanted to make sure I had in mind what the serving was meant to be.
      I can do this this time!!!

                I actually threw my own recipie together, since I didnt have any whipping cream and couldnt get any right now, I decided on this:

                2 Pkgs Cream Cheese
                1 Cup Boiling Water
                1 Packet of Sugar Free Strawberry Jello
                2 Packets of Splenda

                I dissolved the Jello in the water and cooled. Then I beat the Cream Cheese till Fluffy, and added the Jello Water, slowly, beating after each addition. Then I whipped in the 2 packets of Splenda. Spread it into an 8 by 8 inch square glass baking dish and popped into the freezer. I hope that it would be induction friendly. I figure one piece would be sufficient. It is in the freezer now, I am tempted to try a piece after supper. lol
                I can do this this time!!!

                  All the ingredients are Induction friendly".

                  My personal opinion of s/f jello is that it's not helpful for anyone on Induction ... it's using aspartame, which Dr. Atkins doesn't recommend.

                  And on top of that, you added more sweetener???

                  Not exactly something that's going to help you get rid of a "sweet tooth".

                  I don't see how this is going to help you achieve your goals ... but that's me.

                      I didnt realize it had any sweetner in it, it says Sugar Free so I assumed there wasnt anything in it. Next time Ill read the lables.

                      Im sorry if this sounds mean, but both of your replies to my postings have been filled with negativitiy. It feels like you are belittling me. Maybe that isnt your intention, but I came here for support and if you are trying to encourage me it seems like you are going about it in the wrong way.
                      It makes me wish I hadnt even joined this group. I am a member on some other message boards and no one there replies to me in such manner.

                        Aw, nuts. I don't have an induction friendly no bake quite ready yet, but I have one you can bake, if you're interested! The crust is made from oopsie rolls (recipe here) Or you can omit the crust altogether. If you omit the crust, you might want to line the bottom of the cheesecake springform with parchment paper, or you can make the recipe into small cheesecakes in cupcake liners.

                        Cleochatra’s Faboosh Cheesecake

                        5 8-ounce packages cream cheese, softened
                        1 1/2 cups Splenda baking granules
                        1 Tbsp ThickenThin/Not Sugar (optional)
                        3 eggs
                        ½ cup sour cream
                        1 Tbsp lemon juice
                        1 ½ tsp vanilla extract

                        For the crust
                        3-4 oopsie rolls, made into crumbs *
                        2 Tbsp butter, melted
                        2 packets Splenda
                        ¼ cup butter, melted.


                        Making the crust:
                        *To make crumbs, I leave oopsie rolls in the refrigerator, uncovered for one or two days. When sufficiently stale, they can be grated on a cheese grater fairly easily, then blend with melted butter and Splenda and press into the pan.


                        Making the Filling:
                        Heat oven to 325 degrees Fahrenheit.

                        In a mixer, beat cream cheese with Splenda on medium for about one minute. Add ThickenThin until just combined (10-30 seconds). On low, add eggs, one at a time, until just blended. Finally, add sour cream, lemon juice and vanilla and beat just until blended (10-30 seconds).

                        Pour into crust. Bake until set, 1 hour 15 minutes-90 minutes. Cool on rack for 15 minutes before moving to chill in the refrigerator.

                        I don't have nutritional information on this yet.

                            In addition to the sweetener limits, there is also the cheese limit to keep in mind. So let's say that a recipe uses 6 packets of sweetener and 8 ounces of cream cheese. We have a 3 packet sweetener limit and a 4 ounce cheese limit daily. So you can eat half of that recipe even if the recipe orginator says it has 4 servings, because 1/2 of it is within your maximum sweetener and cheese limits for the day.
