  • What Do I Do With Clotted Cream???

    I bought a jar of English Clotted Cream and don't know what it is used for. I tasted it and it's pretty yummy...reminds me somewhat of creme fraiche. I was thinking of getting some raspberries for a berries and cream. Other than that, I have no ideas.

    Any suggestions for other uses would be very much appreciated.

    Scones.

    Alas, a scone is not so Atkins friendly!

    It would probably work with a flax muffin.

      One could make the LC scone recipes on Linda's web page. I didn't try those recipes, so I don't know if they are good...

        Yes, that stuff is yummy!

        You can use it to enrich scrambled eggs---beat the eggs and add a tablespoon of the cream to it. Also if you make a pan sauce, after deglazing the pan with water/wine, reduce the liquid, then remove the pan from the heat and swirl in a tablespoon of the clotted cream (just as you would do if you were using cold butter). A similar sauce can be done with steamed or boiled veg.

        And of course, you can always eat it off a spoon.

          Also, creamed mushrooms is good with it. Saute the mushrooms, when cooked stir in the clotted cream and chopped chives. I stuff the creamed mushrooms into an egg crepe made by scrambling an egg and frying it on both sides in a frying pan. It makes for an "elegant" lunch or supper.

            We had this for brunch today and OMG it was sooooooooo good! I sauteed cremini mushrooms (small Italian brown mushrooms) in butter, then stirred in the clotted cream and some fresh, chopped chives. The chives really added a nice flavor. I never would have thought of that addition. And of course, the egg crepe was cooked in butter. Clotted cream and butter...can't have that on those low fat/low cal/low taste diets!!!

              That's based on a recipe I got from a Frugal Gourmet tv show! Only Frugal used a bechamel sauce for the mushrooms. It was very good and was my special meal during my lacto-ovo vegetarian days.

              I imagine the clotted cream would be good in a Beef stroganoff as well----the beef stroganoff recipe I use is one from another Frugal Gourment tv show where the meat, mushrooms and onions are sauteed separately and then mixed together with sour cream only.

                I loved Jeff Smith and used to watch his show on PBS all the time. Was very sad when controversy ended his career. I have all his cookbooks and still use many of his recipes. I think I need to look through the books again.

                This has nothing to do with clotted cream (I'm hijacking my own thread ) but here is a great site with 13 pages of Frugal Gourmet recipes. LOTS of veg recipes in there for the veggie challenge too for any challengers reading this.

                  I think the mushroom crepe recipe is in the Frugal Gourmet celebrates Christmas and the beef stroganoff is in the Immigrant Ancestors one. But I remember watching the Fruge making the crepes and the stroganoff on his show and made those things from memory----so I doubt they are word for word from the book because after a while, the Fruge would only give a skeleton summary of the recipes as he was demonstrating them. I remember in the really early ones, the recipe would pop up on the screen and you could copy them down.
