  • Recipes That Use Red Wine?

    I have about 1/2 a bottle of red wine left that's been sitting out for a while and therefore probably not all that great tasting. However, it's definitely still good for cooking. I've always wanted to use wine in cooking but have never done so. Does anyone have any Atkin's friendly recipes that use red wine? Thanks

    I don't know what Phase of Atkins you are in, so I'll give you the warning that wine or any other alcoholic beverage is not allowed during the Induction Phase. And wine does not cook out completely from a food: it depends on the amount of the wine, the length of cooking time and even the size of the cooking pot.

    Anyhow, you can use wine in Atkins recipes like you would wine in other recipes: to deglaze a pan for a sauce, to marinade, to braise, etc.

    I don't know how long your bottle has been open, but typically, the rule with wine is if it's not good enough to drink, it's not good enough to cook with. So if the bottle has been open for a particularly lengthy time, you might want to consider allowing it to go to vinegar.
