I feel like something light, so I'm thinking some sort of soup. Maybe I'll do a riff on something like hot and sour.

Hmm, is that a special recipe? or are you just trying to convince us of that, or even better, convince yourself?

                    LOL

:laughing Actually Tofu is yummy if made right!

                      Tofu won't kill you

1 block of extra firm tofu, cut into bite size pieces and marinaded overnight in a olive oil, garlic, season pepper, season salt, vinegar mixture.

1 - 2 cloves garlic (I use the already chopped stuff in a jar)
                      1 medium onion, sliced
1 and 1/2 cans of vegetable or mushroom broth
1 tomato diced (I use a small can of no salt diced tomatos)
seasonings of your choice (I like to use season pepper and sea salt)

Drizzle olive oil in a pan (enough to coat the bottom) and heat, throw in the tofu and garlic and cook until the tofu starts to turn golden. Add in the onion and cook until the onions are soft. Turn heat down to low, add in broth and tomato and let simmer for a few minutes. season to taste.

                      Yum yum yum! :yes

Sounds yummy. And actually, you don't have to convince me, I love tofu!

In fact there is a japanese dish (that I can't remember the name of right now darn it!) that is made with tofu and ground beef that I'd like to find a recipe for...its got kind of a sweet taste to it so I'm thinking it calls for some kind of sugar but I'm sure we could figure out a substitute. Hmm, let me go surfing see if I can find it.
