I'm gonna try Mog. I just got in from Walmart and picked up some radish seeds. Mark is going to be so excited! LOL. We can't do a real garden anymore cuz of the animals eating everything. So I am doing Tomato plant and Green pepper and Parsley plants in pots that I can move onto the porch once they have actual veggies on them. Radishes should be ok as they are underground.

OK so I did the breakfast casserole this morning with jicama. I had it already diced in the fridge so I figured I would give it a try.
First what I did was to put the jicama in the oven with a stick of butter for about 30 minutes at 350 degrees. Jicama takes a long time to cook!! Then I transferred that to the 9x13 pan added 5 eggs and some granulated garlic and onion, and followed the directions from there. Here is what I came up with. A couple things, I think 5 eggs is not enough for a 13x9 pan, or I should have shredded the jicama, or used less maybe. It is very thin, I expected it to be "taller" I guess. LOL. The flavor was very good and quite filling! I will try again with the cauliflower next time.

I just wanted to say I make the jalepno pie all the time (thats not what I was calling it tho) and I add fresh cilantro to it and shredded cheddar. a wedge is a delicious lunch served on a bed of greens with a dollop of sour cream and few sliced black olives. even my hubby likes it so I make it frequently.
If you don't like hot stuff (perish the thought) you can use mild green chiles instead :icondance
