    I'll try to liven things up for Nurselady

    I just got my first slowcooker!




    My first recipe is Chicken Adobo. It's been cooking for 4 hours now. Never made it, or even had it before, so not sure how it will turn out. Searched the Net for some recipes..and decided on this one:

    1/2 cup soy sauce
    1/2 cup white vinegar
    2 tbspoons chopped garlic
    I small onion chopped up
    2 or three pounds of meat (i'm using skinless chicken thighs since that's what i had)

    Combine all in the cooker and cook on low 7/8 hours or on high 3/4.



    I'm curious to see how the sauce tastes. Some recipes call for a bit of sugar at the end, I'll wait and see how the sauce turns out and maybe add some splenda.

    I'm having mine with either zucchini or cauliflower, the family's over rice...

    I love chicken adobo! It's one of my favorite Filipino dishes--really easy too!

    There are variations on it where you can add some coconut milk and or eggplant to it. Also you can change the meat and use pork.

    Very yummy and like any stew, it gets better the next day.

      OH! Yea! I love your new slow cooker! :joy I've never had that dish either so I am very anxious to see how you like it! Please take a pic when its all finished too!


      I'm still waiting to get my pressure cooker. Everytime I think I have the xtra cash, something happens.

        I have some coconut milk here too..I may put some of the sauce aside and try it both with and without..thanks for the idea..I was trying to think of variations but thought i'd try it fairly basic first.

        I actually had been putting off buying one for the same reason never seemed to have the cash. We have a Walmart type store here that has a points system when you shop there. Turns out I had enough points for this slow cooker! I could have got a digital one but it was smaller..i figure the bigger size is better than the digital. I'll take a picture when I"m done..

        Tomorrow night: Indian curry chicken (chicken thighs were on sale this week LOL).

          Oh yeah, if it's too tart for you, the next time, cut the vinegar by half and replace the remaining fluid with water. The recipe I have uses a 21 soy sauce: vinegar: water mixture and I don't have to add sugar to it.

          That's the great thing about this kind of stew recipe, you can vary it to suit your tastes. For example, if you want more garlic the next time, add more garlic. If you want some peppery heat, add coarsely crushed black peppercorns.

                Here's the update on my Adobo. I ended up adding the coconut milk (not too much, maybe a 1/4 cup, Just to take a bit of the tanginess from the vinegar, adn i added about a tbsn of liquid sweetener (sodium cyclamate). The sauce was awesome! About 1/2 an hour before it finished cooking i added some cauliflower. I served mine over sliced zucchini, and stirred in cooked rice for the families. The only thing I wouldn't do again is make it with Chicken thighs. There were far too many small bones, and since it was done in a slow cooker they fell apart making it hard to pick the bones out. Thighs would probably do well if you did this in the oven for a shorter period of time.
