Grilling time is here!!!! what is your favorite recipe?

    It is true Kinsy!!! I have strategically located myself so I can eat my way around the world and not have to travel more than 100 miles to do it!!! Until recently there was no good Southern Italian here but I found a spot in Olympia that allthough it is pricey it is very very good!!!...my life is almost complete!!!!!

    How about some Carne Asada you guys????

    I like to use a pounded flat skirt steak but any good thin grilling meat would work marinate overnight in the following marinade

    6 garlic cloves, minced
    1 habanero (or other hot pepper), minced
    1 large handful fresh cilantro leaves, finely chopped
    Kosher salt and freshly ground black pepper
    4 limes, juiced
    1 lemon juiced
    1/2 cup white wine
    1/2 cup olive oil
    1tbl fresh cracked pepper
    1 tbl cumin
    1 tbl New Mexican chile powder

    toss it all in the blender and whirl until mixed put meat in a zippy bag and turn when you think of it ...when ready to gril take out of the bag and pat dry
    flash grill it is better if you just sizzle it on each side get the lines and get it the **** off the grill ...med rare is best!!!!...serve with lettuce leaves for rolling up
    condiments like sour cream home made salsa guacamole....ENJOY!!!!

        Yesterday we smoked chickens (4 of them) in our smoker. I seasoned them heavily with Old Bay, Garlic Salt, Rosemary, Sage and Thyme, inside and out! Then we slow smoked them for 4 1/2 hours..they fell off the bone! We took two of them up to our neighborhood tavern and they were gone in minutes. Everyone was asking for the recipe!

        I love our smoker, can't wait til Salmon goes on sale so we can do a big batch!

          Mog we have been using the smoker a lot lately. Mark got a recipe for beef jerky and he is working on perfecting it!!

            Hmm, that's an idea! Never thought about smoking my jerky. I have a dehydrator so I use that. Smoking sounds good though! ensive

              MMMMMMM that smoked chicken with herbs sounds really good MOGGIES!!! I put oranges inside mine and smoked it last year ......

              I want to make a rolling paper joke so bad you know but I am holding it it.... :sarcasm

                  well speaking og grilling my husband got his early Bday gift today (because my oven is broken and I am having the aforementioned dinner party and I can use the grill to cook so it all works out!!!) so come on guys load me up with more grilling ideas.....this is one of those nice stainless propane jobs with a burner on the side!!!!

                  and levels to cook on...not the high high end but a decent model!...he is so proud all standing there ..nothing like a man and his grill....now the kids can go and buy him all the dorky stuff to go with it!!!

                  I can tell you another nursey trick ...grilled lamb kabobs

                  use rosemary sticks if you have them for skewers and marinate your nice cubes of lamb in olive oil lemon and garlic lots of garlic...fresh cracked pepper and kosher salt then grill ....yum.....
