    Hi,
    Does anyone know if the Dreamfields Elbow Noodles that boasts of only "5 digestible carbs" is legal or not. The total carbs show 42 grams and only 4 grams of dietary fiber. My regular elbow noodle are 49 grams. It sounds like a play on advertizing, but I would like to know what the "digestible carbs" are all about.

    They are supposed to have developed a "secret" process for creating starches that can't be completely digested. According to the manufacturer, a great deal of the carbs pass through the body unchanged, much like fiber.

    People who monitor their blood glucose have tested Dreamfields and so far it is shown to have very little glycemic impact. I personally need more information than what I'm hearing. Glycemic impact is only a small part of the Atkins WOE.

    What I would like to see is the "digestible" carb counts for regular pasta. That would help give me a framework for how Dreamfields defines a "digestible" carb.

      haven't tried dreamfields. looking at the carb count didn't impress me. i use carb fit spaghetti. it has 17 grams of total carb, 8 of those are dietary fiber leaving 9 net carbs. it has a different taste than "regular" spaghetti noodles but now that i've gotten use to it i don't think i would go back to the white pasta even if i wasn't counting carbs.

        I use Dreamfields on occasion when I am wanting some mac and cheese as a side dish. I don't eat a lot of pasta anyway. I haven't had a problem with it. I have read on their website about their new way of figuring carbs, and it looks good to me. However, I would imagine that it wouldn't be good on a daily basis, and if you are a serious pasta addict, it might be best to stay away from it!

          I have tried the Dreamfields noodles, they taste ok to me, actually they taste more like fresh made pasta to me than the regular dried pasta. I absolutely love Macaroni noodles with tomatoes, ground chuck, and onions. So with this product I am able to indulge....but only occasionally.

          One thing I have noticed, when you measure out the 1/2 cup serving, it doesnt look like much, but it practically triples in size.

            Dreamsfield has some very very creative math.

            Muellers had lower carb pasta and they count theirs at 19with the exact same ingredients.

            they replased some of the wheat flour with wheat protein isolate and gluten (and before you ask Scott they do both so it is lower on the ingredients list then the semilina sp? flour so it looks like real pasta on the ingredients sort of like those manufacturers who use several kinds of sugar so it looks lower in sugar.)
            But the bottom line is if you are a proper Atkins WOEer you look at the ingredients list and see it has wheat in it so that makes it a grain product and you wait until the 9th rung of OWL to eat it.

                I can't speak to how it works, but I've been eating it w/no ill effects. No stalls or gains that is. But there are alot of things that some have issues with that don't bother me (sugar alchohols/caffine/etc)

                      it said that with all the soluble fiber in there the stuff sits in your tummy longer so the 1 hour blood test shows no impact but a 3 or 5 hour test will show a spike and as a low carber we don't care how long it takes mouth to blood stream all we care is how much goes into our bloodstream total.

                            Even though the ingredients used in Dreamfield's looks exactly like those used in other (high-carb) pastas, they say that it's the process, not the ingredients, that cause it to lower the glycemic impact. I'm not diabetic, so I don't monitor my glucose levels. I can tell you this, on the other hand: this pasta causes you to retain water just like any other high-carb item, so that I gain a pound or two every time I eat even a small portion. On the other hand, I know that it's just a temporary effect, and the excess pounds disappear after a few days (I'm on maintenance) as long as I stop eating it. Therefore, I only eat a max of 2 ounces (dry equivalent) every week (or after my weight goes back to normal), or the "water weight" would probably never come off! It does make a nice treat.....
                            On the other hand, I wonder if this is any different from regular pasta. Regular pasta has the same caloric content as Dreamfields and I'm sure the worst that could happen is that I'd ......gain a couple of pounds immediately that would come off after a few days of lower carb eating. Therefore, I imagine I could do this with any high-carb pasta

                              Dreamfields seems to be effecting different people in different ways. While we do need to look at total carb intake, the speed at which they are absorbed is another major factor, and plays in more at the maintenance level.

                              There are two things working together in Atkins: you have ketosis encouraging metabolism and fat loss, but you also have the elimination of blood sugar spikes/insulin spikes/all blood glucose being turned to fat by eliminating carb spikes. If dreamfiels time releases the carbs very slowly the second factor should not be a problem, but the first still would be. This would make it definately unacceptable for the induction phase and probably for OWL as well, but could make it fine for those who are on the maintenance level.
