I tried making the sourdough bread in the oven, it turned out as you described above, not cooked in the middle, doughy. So I borrowed my sister's bread machine and ran it on the regular cycle for 4 hours. It turned out perfect, however be prepared to scarf it down, it will get moldy in less than a week since there are no preservatives, and it's difficult to cut. I've found that I like the presliced country white bread much better than making it myself in the bread maker, and here in MN it's cheaper than buying the mix!! Go Figure!
