Hash-browned Zucchini(Induction friendly with picture)

  • Hash-browned Zucchini(Induction friendly with picture)

    1 tablespoon butter

    1 zucchini

    salt

    1 teaspoon spring onion

    ½ mince garlic

    1 egg

    2 tablespoon parmesan cheese


    Combine zucchini with salt in a bowl. Let stand for 15 minutes. Squeeze with your hand to press out moisture. Stir in eggs, cheese and garlic. Melt 1 tablespoon of the butter in a wide frying pan over medium-high heat. Take 1 tablespoon mixture and pat slightly to make a patty. Cook patties, turning once, until golden on both sides.

      You are very very welcome, Momtofour! I hope you'll like it as I did.
      It’s so simple to make this meal. It’s really delicious. Unfortunately I can’t remember on what website I found the recipe but I took the note: “Karen Nussbaumer treated the judges to Hash-Browned Zucchini for which she was awarded a finalist position in the Vegetarian Main Dish Category”.

        This is probably a dumb question but...Do you have to shred the zucchini?

          I did shred zucchini with medium toothed size grater before combining it with salt. I'm not sure if I named grater's type correctly so I better post a picture of it.

              Wonderful, thanks. I tried this once with turnips - didn't turn out too well but tasted ok. I think I'll try the zucchini.

                Can't wait to try this...I really miss hashbrowns! hehe
                I haven't eaten zucchini in years so I'm curious how I like it.

                Any idea on the carb count of 1 tbs. shredded zucchini?

                  I just made these and they were delicious!!! The only thing is that I shredded them too thin, and they turned out more like pancakes because I wasn't able to squeeze all the moisture out...but still, they were yummy!

                  I'm going to shred them thicker next time and see if they turn out more like the picture looks. heh

                    I’m so glad you enjoyed the zucchini. Yesterday I bought 2 small zucchini and I’m going to make them next week again.
                    Sorry, Jdbeckers, I don’t know about Net Carb per 1 tablespoon of grated zucchini. But there are only 18 calories and 2 g Net Carb in 100g zucchini.
                    I’ve read your comment somewhere about celery. I couldn’t stand the taste of celery as well until I tried “Guacamole” recipe from Dr. Atkins New Diet Cookbook. Instead of cucumber sticks I used celery sticks and I liked it. Maybe you should give it a go too? If you don’t have the recipe I can post it for you.

                        The "Guacamole" recipe for you, Jdbeckers. Please, let me know what you think about it.


                        Serves 8


                        1 avocado, peeled and chopped
                        80g/ 3 oz onion, peeled and chopped (I used spring onions instead)
                        1 tomato, chopped
                        1/3 cucumber, peeled and chopped
                        ½ teaspoon salt
                        1/8 teaspoon hot chilli flakes
                        1 tablespoon sour cream
                        1 tablespoon chopped parsley or coriander


                        Place the avocado, onion, tomato and cucumber in a food processor and process for 10 seconds. Season with the salt and chilli flakes (I also used and ground fresh pepper). Add the sour cream and parsley or coriander and process for 5 more seconds, then tip into a serving bowl and refrigerate until needed. Use as a dip with cucumber sticks (I used celery sticks instead).

                            Got any clue how big the "one zuccini" is that that recipe calls for? We have our own garden, and our zuccini are like 3 pounds a piece.
