  • Bacon Cheeseburger Quiche

    Ingredients:
    a.. 1 lb. very lean hamburger
    b.. 1 small chopped onion
    c.. 4 slices crisp-cooked bacon, chopped in bits
    d.. 3 eggs
    e.. 1/2 cup mayonnaise
    f.. 1/2 cup half-n-half
    g.. 8 oz. shredded chedder or swiss cheese
    h.. garlic powder to taste (optional)
    i.. white pepper

    Brown hamburger in skillet with onion. Remove and mix in bowl with
    bacon pieces, breaking up any larger clumps with a fork or pastry mixer
    until you have a fine mix. Drain well of any excess grease and press into the bottom of a deep-dish pie pan. Set aside.

    Preheat oven to 350°F.

    Combine remaining ingredients in mixer bowl and whip well. Pour
    mixture over beef "crust" and bake 40-45 minutes until top is browned and
    "set".
    Cool 15- 20 minutes before slicing. This can be packaged in Ziplocs or
    plastic containers for meals quickly microwaved over the next 3-5 days. (Does not freeze well, though.

    Serves 6. 2 grams per serving.

      I made this and would only add one additional thing... Salt. I am not one to salt my food much and don't get me wrong, I really enjoyed this recipe but it needed salt added during the cooking stage.

      Thanks for posting and I'll be making it again soon!

        Wonderful Quiche

        I do not necessarily prepare quiche very often. I tried this recipe tonight for my husband and myself and it was very good. I went exactly by the recipe and it turned out perfect. It actually tasted as good as it smelled while it was cooking. I'll definitely make this as a regular meal. I cooked it in a regular sized pyrex pie dish and cut it into 8 pieces. It is very filling and one piece satisifed me. I hope it warms up well tomorrow and tastes as good as it did fresh out of the oven. Thumbs up on this one!

          This is a good recipe!! Made this for dinner tonight. I thought it was delicious, I used swiss cheese, which by the way came shredded in a 5oz. pkg., and that was plenty. I also added a little salt and pepper to both the meat and the egg mixture. What do you think about using sausage instead and having it for breakfast? yum

              I made this the day before yesterday and it is YUMMY! My hubby (also doing Atkins) missed the "real" crust a bit but still enjoyed it and all 3 of our DDs liked it a lot also. I just heated the last slice up to eat for Brunch. A definite addition to our mealtimes. Thanks!

                What do you guys think, could the half-n-half be replaced successfully with soy milk? Would it make a big flavor difference? I've never baked with soy milk so I have no idea.

                  I would think that would work. I"ve baked with Rice milk several years ago and it didn't make much difference. The only thing you may encounter is that the soy milk is probably a little thinner than the half & half. I doubt it would affect the outcome, though. I actually used heavy cream, myself, since that's what I keep around the house.

                    I think I'll try this tonight...sounds quick and easy. Wonder if ground turkey will make a difference

                          This was excellent!! I left out the bacon and used shredded mozarella with a bit of sharp cheddar mixed in. Next time I might try putting some mushrooms in it.

                            I tried this tonight and OH MY GAWD it was soooooooo good. It was a nice change of pace for my usual menu. Thank you to the author! It will become a regular part of my menu!

                              WOW!

                              WOW! 2 thumbs up from me and my 2 year old and 5 year old! They licked their plates clean!! (I used a dollop of carb options ketchup on top)

                              I am sure my hubs will love it too.

                              PS: I added onions to my bacon while cooking it.
