  • Salmon Patties- Induction Friendly

    One can salmon, deboned, 10.5 oz I think
    1/4 small diced onion
    1 tbsp lemon juice
    1 tsp dill
    1 large egg
    1/2 cup crushed plain pork rinds
    salt and fresh cracked pepper to taste

    Mash it all together and make little 1/4 cup balls and flatten into patties. pan fry at a little under medium heat in about 1/4 cup canola oil. Be gentle with these when turning over because they are more fragile than their flour bound patty friends.

    I eat these with Frank's Red Hot and a little brown mustard. Oh! My mouth is waterin'!! This is a good low carb comfort food for me! Sorry no pictures, I will add some next time we have them.

    I love these things. Did you know you can substitute canned tuna for the salmon and have tuna cakes?

        Canned crabmeat will work, though the fresh crabmeat would do better. Many crabcake recipes use mayonnaise and egg as the binder. So you might want to try that.

            Tell me about it. I can't eat crab because I'm allergic to it, but I do feed it to guests who can eat it. Around here it's something like $9.95 a pound for jumbo lump meat. Even the prices for whole crab is ridiculous ($150 per bushel!) and I live near the Chesapeake Bay!!!!!

              I tried these a few nights ago and they were yummy! I fried them extra long so that they were crispy on the outside. The dill is definately a nice touch. I dipped them in a spicy ranch dip.

                I LOVE salmon, period. I will have to try the salmon cakes. The pre-made ones are NOT Induction-friendly. I usually fry the salmon with some butter and eat with a little salt, yum! I think salmon to me is like catnip to a cat! : )
