Chicken stuffed with Salsa and Monteray Jack (pics)

Wrap chicken breast in plastic wrap and place shiny side up on cutting board



Using the flat side of a mallet, pound the chicken breast out to an even thickness



Remove platic wrap and spread the chicken breast with your favorite salsa (we like it extra hot, homemade is best! )



Place a slice of monteray jack cheese on top of the salsa

Roll the chicken breast up, tucking in the sides as you go, to keep the cheese and salsa inside



Using cotton twine, tie the breast up snuggly



Dip the chicken in an egg wash on all sides

Roll in parmesean cheese, be sure to coat evenly





Place in baking dish



And bake at 350 degrees until done!

I sprinkled cumin, coriander, paprika and a little black pepper on the tops before baking.

Time to enjoy!

Yep, I made that one up anyway. I don't think I would be good at writing a cookbook though, you have to give measurements and cooking time, I just wing everything.

Definatly a **** of a lot better than my standard eggs or danish, I made a few extra and froze them for later too...
