  • Parmesan Chicken

    This is a recipe that I adapted for DADR ...
    the original recipe called for the chicken to be coated in Italian seasoned bread crumbs .... if you want to only coat the top of the chicken, reduce the mayo to 1/2 cup and the cheese to 1/4 cup. I like the crunch factor so I went with coating the whole piece.

    1 cup mayo
    1/2 cup grated parmesan cheese
    4 chicken breasts - boneless and skin-free
    finely crushed pork rinds
    Italian herbs - I used a blend of oregano, marjoram, rosemary, thyme,
    basil and sage ( Spice Island brand - Italian Herb)

    Mix togther the mayo and cheese ... sprinkle in the Italian herbs to your own taste. Spread the mix on the chicken and press into the crushed pork rinds. Coat the other side of the chicken with the mayo mix and again into the crushed pork rinds.
    I baked mine in a glass pyrex dish . 450 degree oven for approximatly 20 to 30 minutes depending on the size of the chicken breasts.

    You don't need to add any salt to this ... the chicken is moist and so tasty !

      When I saw this recipe I had to comment!
      I have been making this for my family for a few years. It is one of thier favorite recipes. You dont taste the mayo people.....it sounds gross but try it and you will love it. The parmesan crusts up for a nice flavor

        I'm not a huge fan of pork rinds - does their flavor come thru a lot on this recipe? I have a bag of pork rinds that I bought and have been trying to figure out how to use them since I don't like them plain!

          Unless you're like me and just simply can't handle feeding your sweet tooth what I like to do is take 6 packets of splenda and about 1/4 cup of cinnamon and dump them in the bag, shake, and enjoy!!!

          Also, dunking shrimp in butter and crushed garlic, then crushed pork rinds, then frying or baking them is pretty good. Like a mock breading YUM!!

            this recipe is so good the chicken you can cut it with your fork...yummmmm.

              I never used the pork rinds in this recipe because I never had them on hand. The chicken does come out juicy doesnt it?

                I never used the pork rinds either, but I will try that sometime. I hate mayo, and this recipe, u cant taste the mayo at all...YUMMMMMM

                  I've been making this recipe for a couple of years, but I fry them up in a pan with butter. I also dredge mine in eggs, and then the crumbs mixed with fresh grated parmesan cheese. Hubby and I like them better than the chicken strips from the restaraunts!
