I use Egglands Best eggs and they list 0 carbs on the label, but when I entered it as a custom food, I listed carbs as 1 instead of 0. So, for example, if I have a 3 egg omelette with an ounce of cheese, that is 4 carbs even though the labels would have you counting it as 0 carbs.

      This recipe sounds good, but.....

      can anyone help us cavemen who don't have a microwave and let me know if this can be made in a regular or toaster oven?

        I don't think I could survive without a microwave.

        Well, I probably could, but why would I? Small microwaves at someplace like Walmart are pretty cheap.

          Thanks for this valuable info Mitzie. I had no idea. All this time, I've been eating 2 eggs for breakfast but fitday counts it as 1 carb. I also eat queso fresco and the label says 0 carbs. I already edited that on my cutom label on Fitday. Thanks, thanks, thanks.

          Oh, and thanks for the muffin recepie. I'm gonna try that tomorrow for breakfast. Sounds yummy.

            I haven't made the muffin, yet. I have had all of the ingredients for a while now. I think I am scared of it, for some odd reason. Maybe it is because I am such a bread-a-holic, that I am afraid that I will like it too much or something.

                Flax is not a "freebie". Yes, the label says 4 grams of carbohydrate and 4 grams of fiber per a serving. Like other foods, in the US, the labeling is not exactly correct.

                According to the USDA National Nutrient Database for Standard Reference, 1 tablespoon of ground flax seeds has 2.02 grams of carbohydrate and 1.9 grams of fiber for a net 0.12 grams/tablespoon.

                As used in this recipe, there would be 0.48 grams attributable to the flax. I'm not sure where the creators of FitDay got 6 grams.

                An alternative would be to do 2 tablespoons flax and 2 tablespoons wheat bran.

                  I would imagine 350 degrees F for somewhere between 10 and 20 minutes would work. I am estimating based on flax muffins going for 20 minutes. Test with a toothpick at 10 minutes, if you get egg on it, it needs more baking time.

                        I also like these with a little vanilla or maple extract in them. About 1 tbsp. It makes them a little more moist and gives them some extra flavor.

                        As for the counts on these. I don't know how they got them. It was from another board and those were the counts listed. I went to the USDA website though to check it out the net carb counts, and this is what they had listed.

                        .6 for one large egg
                        .9 for one packet of Splenda
                        .24 for two tablespoons of ground flax seed
                        1.7 for one tablespoon of cinnamon (that one was a surprise for me)
                        Total 3.44 net carbs

                          YUM, I put vanilla extract in mine this morning and it was more moist. It felt like cheating. It was like having a bran muffin.

                          Your count says 2 tablespoons, is that 1/4 cup?
                          And where's the baking powder?
                          DO you not use it??

                          I put the ingredients in at fitday and it gave me 18 - 7g for a total net of 11.

                          Hmmm, can the differences be that big in flax meal??

                            I made this, this morning and it was pretty good. Next time thought I'll do what sensfan1960 said to do...melt butter and whip egg in together then add to dry mix and mix again. I didn't and got a little mess at the bottom of my coffee mug

                            It was good though and felt good eating it too...thanks!

                              Actually it is 4 tbsp in 1/4 cup. I checked our flax seed meal. It is Bob's Red Mill Flax Seed Meal. In 2 tbsp it shows 4 grams carbs, but shows that it also has 4 grams dietary fiber.

                                I tried it and was very baking powderey tasting, cut it down to 1/4 teaspoon and was much better although not as tall when cooked. I put some sugar free peanut butter on it. yum.
