  • Cheesecake Pancakes...DIVINE!!!

    OMGOSH!!! I just made the YUMMIEST Pancakes!!!
    My friend got the recipe from a lowcarb cookbook and they are THE BEST.
    The only problem I had with them was flipping them, as you will see from my pics...lmao!!! BUT, even in a big pile of mush they are DIVINE!!! Oh, one other problem O_O I ate TO MUCH!!! I cut the recipe in half (which is what I am posting) and it was close to 600 calories PLUS the butter. I can't think about it!!! Anyways, next time I will cut this recipe in half again. It makes 6 pancakes...SIX...I ate 6 pancakes!!! [img]images/smilies/eek.gif[/img] *faints* Well here it is...BEWARE!!!
    They're only 5 NET CARBS for the whole thing though!!! Oh, and the butter is extra calories so be sure to add those in *sigh*

    Cheesecake Pancakes


    Ingredients

    2 large eggs
    4 oz Cream Cheese
    Sweetzfree (to taste) or Splenda
    .5 tsp Cinnamon, ground
    1 tbsp Flax Seed Meal (ground flax)


    DIRECTIONS

    Place the egg whites in a separate bowl and beat with electric mixer until stiff peaks appear.
    Place the cream cheese in a large bowl and beat with the mixer until smooth. Beat in the egg yolks and the the sweetner, cinnamon, salt and flaxseed meal. Fold in the egg whites.
    Heat large heavy fry pan over meduim low heat. Grease lightly with butter. Form pancakes using about 1/4 cup of the batter for each pancake. Cook until golden brown, about 2-3 minutes each side. Don't rush these- if you cook them on too high of a tempature, the butter will burn.

    Can be served with Butter, Fruit, Whipped Cream...whatever you like. They're great plain!!! I had a hard time flipping them without them falling apart, but they're still GOOD!!!

      OMG!!! I just made these pancakes and they are SO incredible!!! I, uh, kind of ate them all too! It made 5 pancakes, but the batter was good too, so I had some of that (oops).
      Try these pancakes!! They are delicious!.

        I have made these before and they are great! I put blueberries on top in the batter before I flipped them to cook on the other side. OMG!

          YUM!!!
          I loved them a little to much
          Fruit in them sounds really good.
          The only problem I had was them falling apart. They still taste good even in a pile of mush

                Half the recipe is 1 net carbs. The whole recipe is about 2 net carbs. Here is the nutritional facts if you cut the recipe in half

                  Ok and you DIDN'T split it and made the WHOLE recipe and got 6 pancakes so 1/2 would be 3 pancakes? Just trying to decide what to make in the morning.

                    It depends on if you use Splenda too. I use Sweetzfree which has zero carbs. Splenda has carbs. I always round up my carbs too.

                          Wow, I just made these and they were great as is! I had the LC pancake syrup out and after having my first bite without it I put the syrup back in the fridge. YUM!

                              I made these today. I added a tsp of protein powder to them as well. Then I topped them with blueberries and fresh whipped cream. OMG!!! They were so good. I ate two of them and have 4 left. I'm hoping they re-heat well.
