I used a plastic spatula. The batter stuck to the spatula when I flipped it, which ended up helping me.

...sorry for the change in my ticker. I started atkins about 3 years ago and I am just getting back on track. So, I thought it was a good idea to update my ticker. I don't even know what I weighed then. However, it is good to know that I have less to lose now!

Try aother egg to help hold em together. Sounds like toomuch creme cheese for the 2 eggs to handle.

I made breakfast again yesterday and here is the picture. I used 2 eggs and 2 ounce of cream cheese plus 1 tbsp of flaxmeal. I made a sauce using butter and a pack of splenda. It was very very yummy. When I made that breakfast, I really thought that I could servive on this WOE. Before I wasn't sure.

I made these this morning, didn't add the splenda - they are SOOOO yummy! I used a bit less cream cheese, found that the butter from the pan was plenty - I ate about 2/3 of what I made. I still can't get over how yummy they were!

Thanks for this recipe! I haven't tried it yet, but pancakes are one thing my son says I make the best, and he'll miss them. I'm trying to get him off of so much flour/sugar also, and maybe he'll like them too. The pics look yummy!

I made these yesterday for breakfast today... I was all smartypants and had a pancake turner kind of pan and thought they would come out all pretty - okay they have tendancy to stick even with lots of spray - they did come out pretty tasty though The only thing was that I still missed pancake syrup but I will try these again

                              Re: Cheesecake Pancakes...DIVINE!!!

I made the amount listed, did not cut it in half as suggested, and I ate it ALL. 5 net carbs? Depending on how much splenda you use, I guess, plus the flax?

My recommendations to try: Save the splenda for after they're cooked, butter the pancakes as they come off the pan, and sprinkle the splenda on top, to make a kind of sweet glaze. (At least, that's what I'm trying next time. Or do half in the recipe, half on top.)

These burn easily! They're not like regular pancakes. I had to reduce my heat a lot. They still got too brown, almost burned, but they still taste as good.... with the cream cheese and splenda in it, it tastes a little like cheesecake!

Does anyone know if these reheat well from the fridge in the microwave?

I am wrong about the flax. I'm on induction and still haven't figured out the finer points of the options... now I see the flax is a free carb due to it's being pretty much entirely fiber.

With a limitation of 3 splenda carbs per day, and the 1 cinnamon tsp. equalling .5 net carbs (according to fitday), plus the 2 eggs, that is the 5 carbs.. right? lol.
