    Hi all,
    I decided to try the Cream Cheese Pancake recipe I posted in my Belgian Waffle maker and it came out WONDERFUL!!! Oooooh, it was soooo good. I cut the original recipe in half and it made one huge waffle. Here is the recipe and a pic

    Belgian Waffle


    Ingredients

    1 large eggs
    2 oz Cream Cheese
    Sweetzfree (to taste) or Splenda
    Dash of Cinnamon, ground
    .5 tbsp Flax Seed Meal (ground flax)


    DIRECTIONS

    Place the egg whites in a separate bowl and beat with electric mixer until stiff peaks appear.
    Place the cream cheese in a large bowl and beat with the mixer until smooth. Beat in the egg yolks and the the sweetener, cinnamon, salt and flaxseed meal. Fold in the egg whites.
    Pour into Belgian waffle maker until golden brown,

    Can be served with Butter, Fruit, Whipped Cream...whatever you like. It's great plain!!!

        This was fabulous however mine was very flat.
        I was wondering if anyone had any suggestions on how I could make it rise more in the waffle iron.
        Would adding baking powder help?

            Just wanted to let you all know-

            I tried adding a little baking powder and more flaxmeal and it rose right up this time and was insanely delicious!

            I cut up fresh strawberries, dropped a few chocolate chips and some whipped cream on top.
            Absolutely amazing!

              OMG this sounds INSANELY good!!!!

              One question, how much splenda or sweetener did you use?? I am so terrible at eyeballing things. LOL

                This looks so good. Would it taste good as a pancake? I don't have a waffle maker

                  YES!!! It was a pancake recipe and I decided to try it in my waffle maker

                    Thank you for this wonderful recipe! I must add, most embarrassingly that I only jotted down the ingredients and not the directions. Let's just say that whipping up those eggwhites makes a huge difference if you are using a waffle iron. My waffle tasted great, but looked like H*LL by the time I finally got it out of the appliance!!!! HA-HA!
                    I will promise to follow the directions next time!

                        I made this recipe but since I don't have a waffle maker I made it as pancakes. I was able to get 3 small pancakes out of the recipe. They were pretty good. I had them with butter and cinnamon sprinkled on the top.
