Re: the best chicken fingers ever

    I am Addicted!!!!!

I crush up pork rinds and coat the chicken with them, they are so good.
I use mayo, mustard, and a dab of sugar free honey to make my dip.

I am still amazed that these are "legal" and that pork rinds make them taste so good.
Even my husband said he would eat them if i made them for dinner, I doubt the kdis would even know the difference.

I made these with the crushed up pork rinds and powdered parm cheese. They were great!! My partner loved them also....even said wow, these have a lot more flavor that normal chicken fingers!

Heavenly! I used 50/50 pork rinds/parmesain. Also added a bit of paprika and garlic powder. I have been cooking for 20+ years and this is the first time I have EVER fried anything! It was so super yummy!!!! I made a delicous dipping sauce with 1 tbsp olive oil mayo and 1 tbsp Louisiana hot sauce. I gave my hubby a taste as they were having barley soup for dinner and he kept trying to steal my dinner... Thanks for the awesome recipee!!!!

I plan on giving these a shot this weekend. Im on extended induction and Im always looking to try new things!

What is the best oil to use for pan frying?

Anyone have a good low carb buffalo hot sauce I can make? (that is induction friendly of course)

Dex, I mix 1 tbsp olive oil mayo and between 2 tsp-1 tbsp louisiana hot sauce in a bowl-depending on how hot I want it- The hot sauce I have has 0 carbs listed. in the ingredients there is no sugar added. I had to check several bottles at the store to find one with zero added sugar. it is really really good. The next time I make these I will try it with blue cheese instead of the mayo and see which one I like better. The best part about the mayo/hot sauce mixture is that it is thick and doesn't drip everywhere like regular wing sauce

I don't know if the taste DRAMATICALLY changes based on the cooking method, but I tried making these tonight by baking them in the oven but I really, really did not enjoy it.

I just had a FABULOUS idea... I know, I can smell the burning. LOL

If you fry these in coconut oil wouldn't they taste like coconut chicken fingers?! I love the ones from Trader Joe's.

I guess the only thing I'd question is if coconut oil is okay for induction.

Also, no one ever answered that other person's question about the kind of Parmesan cheese to use-- we're not supposed to use the ones with fillers, so do you suggest we buy the fresh and process it ourselves?

Haha! I think it's funny that I'm quoting myself.

Anway, for anyone who wants to know:

Coconut oil is allowed during induction. Coconut milk and coconut cream are not allowed until other rungs. Everyone can thank Liv for the info.

Also, I think this chicken finger batter would go great on shrimp fried in coconut oil. I love coconut shrimp. Can't wait to try it soon!
