  • chicken and tarragon.

    This is my favourite.
    You put a little olive oil in a pan and cook chopped up pieces of chicken with fresh tarrogan and garlic. add aspargas or spinach and a lttle butter when cooked add some double cream and when it starts to bubble fresh lemon juice. It is lovely.

    You can play with recipe with different veg or add a little parmasan cheese.

    This sounds really good. Tarragon is one herb I have never tried fresh, but it won't be long. I just started from seed my fresh herbs for this year and my tarragon plants are a couple of inches high already. I am growing sage for the first time, too.

      `I would love to grow my own herbs, but never seem to find the time. It must be very rewarding using them in your cooking. Any advice to get me started would be appreciated.

        If you have never raised plants from seed, I would not suggest you start with herbs. Most of the seed is tiny like black pepper and can be quite hard to get started. I have been growing plants from seed for most of my life, and have even had a greenhouse, and I still can't grow oregano from seed to save my life! I do continue to try, and have one tiny plant going right now, but it will probably die soon.
        If you have a commercial greenhouse are a garden centre close by, you can usually get most herbs for a small price. After that, there's nothing to growing them in pots or in a small garden plot. The trick to growing herbs is to keep the new growth gathered before the plant goes to seed. Once the plant sets seed, it starts to die. When I am getting too much to use fresh, I just put the gathered leaves in freezer ziplock bags and in the winter, pull them out and use like fresh.

        Herbs have a lot of nutrition for just a little amount, so I add a few leaves to all my salads. Basil, marjoram and parsley are my faves for adding to my salads.

        Basil is my very favorite scent right now--much better than lavender, my former favourite. I just pick off a leaf and rub my fingers over it and it is so calming. Basil planted near tomatoes cause the tomatoes to produce better.

        Good luck, if you decide to grow your own. Maybe start with your favourite two or three. I started with basil, curly parsley and chives. I am now growing those three and have added flat parsley, cilantro, oregano, marjoram, tarragon, and thyme. They just taste so much better fresh picked and I know mine have never had insecticides sprayed on them!

          Thankyou so much sunny. I will go to my local garden centre. I love cooking and adding fresh herbs will be so much better.

          I sometimes get fresh in marks and spencers but it is not local. Freezing is a good idea too. i never thought of that.

          I love basil and oregano too.
