    I found it in town. They didn't have it in the deli so I had to buy a cheese slicer and a small block of it. Can't wait to try it tonight!
    male/35/295/250/175? Weight loss is no longer my primary goal. Getting to the point where I no longer feel like h-e-doublehockeysticks is!

      Queso Fresco is a white Mexican melting cheese.

      This is the best pizza I've eaten since I started Atkins...I make this about once every month! It's a LOT of cheese, so make sure you leave enough cheese allowance in your day!

      I added green pepper, onion and tomato to the top of my pizza because I wanted more than just meat (it's probably in one of my posts earlier). I hope you like this recipe as much as I do!

      Also look for TJ's recipe where he took Queso Fresco and made a wrap out of it -- that's another delicious recipe!

          I've been making pizza every once in a while out of whole grain flat outs. You start out with 6 grams of carbs just for your crust alone! I'm going to try this one out tonight as long as I'm able.

              I've never taken a picture of mine (which is strange since I take pics of nearly everything).....but I do have TJ's pictures from when he posted the recipe originally:

                    I just made this and it was so good, thanks for the recipe. In fact it was so good my entire family ate it and there's no leftovers for lunch tomorrow, lol. A couple of lessons learned, first, I don't think I overlapped the queso cheese enough and I had holes in my "crust". Second, next time I think I'll do it on a real pizza pan (the kind with holes in the bottom) so the bottom and top both brown at the same time, flipping it didn't work too well for me. And it doesn't seem that this cheese is so gooey that it will leak through the holes on the bottom.

                    Here's my first attempt:

                    1st Goal ~ 199 Onderland -Met 3/29/10
                    2nd Goal ~ 174 No longer obese
                    3rd Goal ~ 150 In the home stretch
                    Final Goal ~ 145 or below (I'll know when I get there) No longer overweight
                    (Next pic at 187)






                    Current Mini Goals:
                    1) 35 pounds lost
                    2) 40 pounds lost to move to Rung 5
                    3) 45 pounds lost to update 15 pound loss picture series

                      We have to pay our power bill at a store. It's been a pawn shop, but today it changed to a Mexican food store. I can't wait to get some Queso Fresco to make this. Yum
