        Re: Pizza Revisited

wanted to update -- I had leftover pizza for lunch today -- it was actually better than yesterday!! I'm going to Walmart to get more queso fresco. I had the queso crust, 1/4 c homemade sauce, 2 oz lean hamburger, 20 pepperoni, 2 oz canadian bacon, 1/2 c green peppers, 1/4 c onion and 1/2 c mozzarella cheese on top....anyway I put it into Fitday and it came out 238 calories and 6 carbs per slice.
I'm going to make one, slice it into individual servings and freeze it for whenever I "have to have" pizza!!!! Yummie

          Re: Pizza Revisited

Carole, that carb count looks a bit high. Did you take out the fiber in the veggies? I had it down to about 2 grams/slice and could have gone lower.

you said you got 6 slices -- I made mine in an 8x8 pan and cut 4 slices. I did forget to take the fiber out so that will change the count down to about 3 or 3-1/2 per slice. Either way it's still not bad. Did you have all the toppings I had on mine? (Pepperoni, Ground Beef, Canadian Bacon, Green Pepper, Onion and Mozz Cheese?) I'd rather go with your totals but I'll recalculate mine and let you know.

Mine was a meat lover's. I'm not an onion and pepper guy. At 3-4 grams/slice, one could eat the whole thing at 12 - 16 if one so desired.

The peppers and onions were what shoved it over the top with the carb difference. I should have put mushrooms on top also...but didn't have any fresh ones and didn't want canned on top - but the peppers and onions were good. When I made my deep dish pizza's before I made them in an aluminum cake pan used 2 pkgs of pizza crust mix and when it had all the toppings on it the whole thing weighed 5 pounds!!! My TJPizza wasn't anywhere near than weight, but the taste was just as good! I was calling it Atkins pizza...but you invented the crust so you get the credit on the name. You did good son!! (that was my best Foghorn Leghorn impression)

Thanks Carole, my newest creation will hit the forum tonight. It's a new twist on chimichangas and my wife was a large part of the brains behind this one. Who wouldn't want a chimichanga on this WOE?

                        I couldnt see them either.

Elizellen, did you find this cheese over here in the UK? never heard of this brand/type before.

great recipe, wonder if it works with any other cheeses?

I was wondering about the cheese too... what sort it is and whether I could find something similar here in Italy.
Also couldn't see the pics, or I could probably have guessed.
                            Sounds like a great recipe!

Wanting to try this but not sure if they sell the cheese around here. I'm so far in the sticks Canadian bacon is considered foreign food! Has anyone discovered another cheese that works?

Haven't seen Queso Fresco around here, Sally. Maybe you're luckier in Italy though.

Earl, maybe you could make your own? The recipe looks pretty easy...
