    Chicken & Green beans in Dijon Sauce

    I made this tonight....it was soooooo good!!! I just had some things laying around, and was trying to figure out what to make...I made this up.

    1.3lb chicken
    3 Tbsp Dijon Mustard
    3 Tbsp Cream
    3 Tbsp Butter
    Salt & Pepper
    1/2 clove garlic
    1 tsp Lemon juice
    1 Tbsp Olive Oil
    2 c. Green Beans (cooked)

    Cook the chicken in a pan with Olive Oil until browned. Drain the excess liquid. Add butter, cream, mustard, butter, garlic, lemon juice, dash of salt & pepper, & the beans. Stir all ingredients until well mixed. Cover & simmer for 10 minutes.

    For a quarter of the recipe, the stats came out to: 303 Calories, 18g Fat, 4.5g carb, 1.75g fiber, 30.5g Protein.

    Induction?

    Would this be ok on induction? I mean, there is lemon juice.

      Everyhting on there is induction friendly except perhaps the lemon juice. I don't think 1 tsp over the whole menu will make a difference though. I always used lemons or lime juice for flavorings while I was on this WOE...hmmm...maybe someone else can answer, but I'll tell you that if ou nix the lemon juice you probably won't miss it. It's worth it...mmmm!!!

          Lemon juice I believe is listed under the other category for induction foods. It will be fine, like higgies said its a small amount anyway.
