Amazing Stuffed Peppers

  • Amazing Stuffed Peppers

    • 1/4 cup green onions (chopped fine)
    • 1/4 cup monterey jack cheese (shredded)
    • 2 tablespoons green peppers (minced)
    • 1 tablespoon extra virgin olive oil
    • 1 can of crushed tomato sauce
    • 1/2 onion finely chopped
    • 1 pound ground beef
    • 1 teaspoon seasoning salt or seasoning
    • 4 green peppers (cleaned with seeds and tops removed)
    • 1 tablespoon parsley
    • 8 garlic cloves (small to medium sized minced) <
    • 1 TSP oregano, 1 tsp of parsley, 1 tsp fresh pepper
    heat Oven to 375 degrees.
      1. Saute onion and garlic in olive oil until onion softens.
      2. Add green onions, minced green pepper, oregano, parsely, salt and pepper and 3/4 can of crushed tomato sauce and saute for about five minutes.
      3. Add the ground beef
      4. Brown ground beef and cook through. Mix well and cook another 10 minutes.
      5. Stuff mixture inside hollow green peppers layering parm chz, mixture, parm chz mixture, then top with shredded mont jack chz (overflow the pepper, its better that way!
      6. Pour reserved tomato liquid in a baking dish and place peppers in dish.
      7. Top each stuffed pepper with about a tablespoon of sauce.
      8. Mound each pepper with cheeses.
      9. Cook in a 375 degree oven for 20 minutes or until cheese is golden brown.

        I found that all crushed tomoatoes are with 2% carbs. How can this be an induction meal? I am new, so forgive my question. It's sounds yummy.

          Tomatoes are an acceptable Induction Food.

          All vegetables have carbs.

          Atkins isn't "no carb".

                    If we did the homework for you, then you would learn nothing. Looking up the foods yourself actually helps you more than a yes/no answer.

                    I hope you have a copy of Dr. Atkins' New Diet Revolution (2002). The Acceptable Foods List is in Chapter 11.

                      Point taken. Though, as I stated.. I am new,, and I was confused about the Tomatoe being allowed.. I learn by experience, and not so well at READING.. communication is a great one..

                      I understand that it's 'homework'.. I asked the question for a reason.. for explaination... not as a test.

                          Nope the tomatoe in the face was for me. I have a book.. I looked up the list.. I was just with the understanding that it was zero carbs.. and i was just concerned...

                          and for the record.. it was DELICIOUS.. even without the tomatoe sauce.
