- 1/4 cup green onions (chopped fine)
- 1/4 cup monterey jack cheese (shredded)
- 2 tablespoons green peppers (minced)
- 1 tablespoon extra virgin olive oil
- 1 can of crushed tomato sauce
- 1/2 onion finely chopped
- 1 pound ground beef
- 1 teaspoon seasoning salt or seasoning
- 4 green peppers (cleaned with seeds and tops removed)
- 1 tablespoon parsley
- 8 garlic cloves (small to medium sized minced) <
- 1 TSP oregano, 1 tsp of parsley, 1 tsp fresh pepper
- Saute onion and garlic in olive oil until onion softens.
- Add green onions, minced green pepper, oregano, parsely, salt and pepper and 3/4 can of crushed tomato sauce and saute for about five minutes.
- Add the ground beef
- Brown ground beef and cook through. Mix well and cook another 10 minutes.
- Stuff mixture inside hollow green peppers layering parm chz, mixture, parm chz mixture, then top with shredded mont jack chz (overflow the pepper, its better that way!
- Pour reserved tomato liquid in a baking dish and place peppers in dish.
- Top each stuffed pepper with about a tablespoon of sauce.
- Mound each pepper with cheeses.
- Cook in a 375 degree oven for 20 minutes or until cheese is golden brown.
