    This recipe is hard to mess up! I first made it Saturday morning and my wife and I liked it very much. It wasn't until later in the day that I realized I had left out the cream! So I made it again Sunday with the cream but I accidentally left out the sweetener! We have a very good syrup and didn't even miss it. Maybe I'll try it again next week end with all the ingredients!

    Lynn, I weighed out 1 1/2 ozs. and it was 1/2 processor full.

      OK, two things. The processed pork rinds comes to ~3/4 cup. It really depends on how fine it gets ground up. Also, over the weekend, I made this with 3 eggs instead of 2 and cooked up in waffle iron, made excellent waffles!!

        OMG! I was VERY skeptical about this as I dont like pork rinds, YET, but it was sooooo good! I just made one big pancake and Dan and I split it....Only had butter on it and it was soooo good! Your the best Brook!!

            I had these this morning and they were delicious! I used a variation on the recepe I found somewhere else, which had only 2 packets of splenda and no vanilla, and it was still delicious!

            I'm going to try some savory variations of these without the splenda or syrup, perhaps with ham and cheese or broccoli. The recepe might also make excellent crepes, if spread thinly on the pan.

              All I can say is "OH MY GOODNESS!". I would never have believed that something that sounds this odd would be so good! Thanks so much for posting this...it's a keeper!

                To cut down on the cream allotment and the splenda allotment:
                I made mine with 1 TBLS cream and 1 packet of splenda. It was still good!
                I also added 1/4 cup water to thin it out some, but learned not to use more than 1/4 cup.
