    I'm absolutely certain somebody must have thought of this way before me, but I was eating a flax muffin the other day and thought, this would make really good bread for a sandwich if you just leave out the Splenda and cinnamon. I just did it and I am eating the greatest sandwich right now! The bread tastes like whole wheat. I made one serving, sliced it down the middle so the two halves were as thick as regular bread and VOILA! I'll post a picture as soon as I take one!

          My sandwich today was turkey, lettuce and tomato with mayonnaise, basic, but really good!

            That sounds fantastic! I can't wait to try it!

            I'm off this week from work and already have my cooked chicken in the freezer. I think I'm going to make my sandwich for lunch tomorrow. Yum!

                I had to bump this. I would like to try this, but there are a million flax muffin recipes out there and wasn't sure which one you used. Could someone post the recipe for this please

                    Muffin in a Minute
                    1/4 cup flaxmeal
                    1/2 tsp. baking powder
                    1 packet splenda
                    1 tsp. cinnamon
                    1 large egg
                    1 tsp. butter (melted)
                    Put dry ingrediants in a coffee mug, or bowl for different shape. Stir
                    Then add melted butter and egg, mix well.
                    Microwave 1 minute
                    1.5 net carbs
                    By omitting the splenda and cinnamon you will get a flaxmeal bread. The carb count will change by omitting the cinnamon and splenda.
                    Edited to say- This recipe isn't Induction Friendly. We are allowed only 2 Tbls. of flaxmeal on Induction. You will have to wait for Rung #3 Seeds and nuts for this recipe.

                      If you want to stay induction legal, you can adapt the above recipe and cook it on a griddle into a pancake.

                      Just use 2 TBSP flaxseed, ground, and a little less baking powder than the recipe calls for, everything else the same, but I add a little vanilla extract. It will be runny, heat a skillet or griddle and cook like a pancake. It has enough touch of sweetness you won't care about syrup.

                      If you are really talented, you might be able to let it cool and slice it with a thread through the middle and get really thin bread... or make two baby cakes for a baby sized sandwich!
