Depends on what you are going to use the cornmeal for. Pork rinds work well for breading, as does flax seed meal. If you are trying to make a corn bread, a mixture of nut flours (See the low carb cooking lessons thread about LC baking) can help a lot.

There's a pretty much perfect LC sub for cornmeal. Very hard to tell the difference by texture or flavor. Look for the cornmeal thread in Low Carb Cooking Lessons.Comment
