    Cornmeal substitute?

    Do you folks substitute pork rinds and how has it worked overall?
    What other ideas are out there for a cornmeal substitute?

    Beginning weight: 170
    Current weight: 130
    Goal: 130 ideally. Will settle for 140 grrr

    Depends on what you are going to use the cornmeal for. Pork rinds work well for breading, as does flax seed meal. If you are trying to make a corn bread, a mixture of nut flours (See the low carb cooking lessons thread about LC baking) can help a lot.

      There's a pretty much perfect LC sub for cornmeal. Very hard to tell the difference by texture or flavor. Look for the cornmeal thread in Low Carb Cooking Lessons.
