  • I got the Bob Mills FLAX MEAL!!

    I bought flax meal today at my local grocer and went straight home to make those crackers everyone's been raving about...and I see why! I couldn't believe it, they were great and just perfect for something to snack on. I had a little cream cheese on mine and it was delicious. Now that I have it, I'm ready to start experiementing. I've been looking for recipes that use flax meal, and it does get somewhat tough looking through all the topics and threads, so I thought I would ask in my own post to get a direct answer. If anyone has ideas or suggestions that would be great!

    I also have a question about the Bob Mills Flax meal I bought. The only carbs in it are through fiber. We subtract those right and get the net carbs. So 2 tbs. that are 4 carbs and the fiber being the only carb where the 4 comes from would make the net carb 0. I hope this is right! I also know not to overdo it and to eat moderatley.

    I just got my first bag of Flax Meal last week so I'm not going to be alot of help with new recipes. But, someone mentioned adding caraway seeds to the crackers and I love them that way, I also sprinkle them with salt just before nuking them! It is my new addiction...Apparently you do have to count some carbs for them though--I can't remember exactly what it is but Book can probably answer that for you...I just make the little batch that is 2 Tablespoons of Flax and I am on OWL so I don't worry too much since I know the carb count is small! Next I want to try the sweet crackers that someone mentioned if I can find the recipe again that is! :yes

      if you count one carb per TBSP you will be in good shape. I have 3 TBSP everymorning for cereal.

      Elizellen recent posted a microwave 'bread' recipe, and I have one just below hers in the bread section of the recipe database. Elizellen's is good if you want something quick, be prewarned it is dense, flax bakes up pretty dense.. but I was able to use it for sandwich bread with tuna salad. My recipe is delicious but takes a little more time. I bake my loaves and freeze half, freezing seems to even improve the texture.

          I finally got the flax muffin recipe tweaked and they are really good!!! I made them with cocoa and sf chocolate syrup. Warm with a little butter, YUMMY!!! My next batch is going to be with sf blueberry syrup and almond extract. The flax muffin recipe is on the recipe site


          Also check out the flax pancakes, they are really good too....

            I mix one large egg with two tablespoons of flax meal and a little cinnamon and cook it like a pancake. You can top it anyway you want but I use some cream cheese and alittle stewed rhubarb (sweetened with splenda of course).

            It's my favorite breakfast- I get so tired of eggs!!
