    I have an awesome stew recipe that I am making on Sunday. Everything in the stew is Atkins friendly except for the flour that is called for to thicken it. It also calls for the packaged stew mix that helps with thickening and flavor and from the package, it looks like that is very low carb so I'm fine there. But the stew mix by itself is not enough to thicken it as much as it needs to be.

    Any suggestions on what I might be able to use instead of flour?

      Oh and check that stew mix..the ingredients that is, make sure there is no cornstarch or sugars.

        Alternatively, if your stew calls for vegetables, you can remove some of the cooked vegetables and puree them until they are very fine. Then return them to the stew liquid. That will help to thicken it up.

          I made stew last night and it's nice and thick..here is what I did:


          Brown 2 lbs of stewing beef

          Put in the slow cooker with:
          5 peeled/cubed (or however many you want) white turnips
          1.5 cups low sodium beef broth (watch carb counts, i use campbells 0g carbs)
          2 tbsns tomato paste (mixed into the beef broth before I added)
          2 large coarsly chopped onions
          2 bay leaves
          1 can of mushrooms
          Seasonings to taste: I used a mixed italian seasoning and salt and pepper.

          I cook it on high in the slow cooker for at least 4 hours. It comes out perfect consistency without having to add any starches. I think the turnips help make it thick.

          My husband who isn't low carbing doesnt' have a clue the turnips are not potatoes.

            I found that when I add any kind of cheese to a soup or stew, it gives the impression of being thick - like a chicken tortilla soup. I often order that at restaurants because w/o the tortillas it is Atkins friendly and very brothy but when the cheese is stirred in it gets thicker.

                Flax goop, pureed cauliflower or other pureed veggies, heavy cream.
