I like using a garlic press and pressing a couple of cloves of garlic. Mix them with ground black pepper and some herbs (if I have any!). Then add enough olive oil to make a paste of the garlic. I smear this on the chicken breast, cover them with plastic and let them sit in the frig to let the garlic flavor penetrate the meat. Then I grill them on my Foreman grill or I pan sear them.
I'm not a big fan of the acid-based marinades (lemon juice, vinegar, etc.) because I find if they are left too long in that marinade the meat texture becomes mushy.~Megs~
