    Re: Pork Tenderloin

Hmm, goat cheese to me is a little too strong for that, but to each their own! Now there is a Tarragon Cream sauce for chicken that is to die for...let me find that one for you
    Thankya Moggy

Very similar to the pork recipe, it also has mustard in it...we love this one too.

I haven't tried this one, but I bet it would be good with your goat cheese (leave out the tablespoon of flour of course)

                Re: Pork Tenderloin

I buy the pork tenderloins from Sam's all the time. You can't beat the price at 1.80/lb (here in tampa) I bring them home and slice them into chops, or small roasts. We like to marinate them in a mojo and then grill. Or, you can put it in a slow cooker with some cumin to make carnitas mexican style. As a roast, they can be kind of dry because of the lean meat in the cut. The darker the meat on the loin, the more moist/tender it will be. I'll also put rubs on them and broil, or lemon pepper.

                  Re: Pork Tenderloin

My husband is a pork producer, and we eat a LOT of pork tenderloin/pork loin. Which do you have? The tenderloin is a small piece of meat about 2 inches in diameter. The loin is about the size of a pork chop without the bone. Some of our favorites include the following:

Pork Stir-Fry (either cut works here)
Saute small pieces of pork loin or tenderloin in a wok or skillet in a small amount of oil. Add broccoli, onions, celery, water chestnuts, bamboo shoots, and continue to stir until veggies are crisp-tender. Season with some low-carb soy sauce and maybe a little Splenda if you like sweeter Chinese food. Serve.

                  Pork Loin Roast
Season a pork loin roast with salt, pepper, and garlic powder. Roast in a 325 degree oven until meat thermomometer registers 160 degrees. Remove from oven, slice and serve. Leftovers make great meat to add to salads for variety.

Pork Kabobs (Great for the Grill)
Cut pork loin or tenderloin into cubes. Thread on skewers with mushrooms, onion, zucchini, and green pepper. Marinate in low-carb Italian dressing for several hours. Grill over hot coals on BBQ.

Pork Fajitas (I do mine on my George Foreman)
Cut pork loin or tenderloin into small pieces. Also cut up mushrooms, green peppers, and onion into strips. Marinate in low-carb Italian dressing for several hours. Grill on George Foreman grill. Add sour cream and guacamole if you want to.

Maple Pecan Pork A Family Favorite! (For those on the Nuts rung, but it's even good without the nuts.
Melt butter in a skillet (I add a little olive oil to keep butter from burning.) Saute pork chops or whole pork tenderloin in the butter until lightly browned. Remove from heat, and top with chopped pecans. Drizzle with low-carb pancake syrup.

There are a bunch of pork recipes that can be found at the following website:
http://www.theotherwhitemeat.com/ Click on recipes. You can save individual recipes on this site so you don't have to go back through all of them. You'll have go to through them, but nutrition information is available for all of them. There are a bunch of them for under 5g.
