I just went to the farm market, and they had spagetti squash!! I have really been wanting to try these, but now I am not too sure how to cook it. I was thinking of cutting it in half, and roasting it with butter and garlic. Anyone have any ideas?? Thank you!!

I usually cut them in 1/2 the long way, remove the seeds, lay them upside down in a microwave dish with a couple of tablespoons of water and nuke them for about 7 minutes. Then take them out and using a fork, scrape away the fleshy part from the inside, it should seperate and come out looking like spaghetti! Then you do whatever you want with it. I like to saute mine in a little butter and garlic and top with parmesean cheese.

Thank you for being a nuke person. Anything I can nuke and be done with quicker is for me. What is the serving size for that? I just had the absolute best dish (Eggplant Parmigiana) so here goes:
Spaghetti Squash preparation:
Poke holes in the squash with a fork
Microwave about 5 minutes per pound
Cut in half and remove seeds
Scrape out 'noodles' with a fork
Put them in a casserole dish
Eggplant preparation:
Remove skin
Cut into slices
Sautee in butter for about 4-5 minutes
Complete the dish:
Place eggplant slices across squash noodles forming 1 layer
Spoon on thin layer marinara sauce (homemade or store bought)
Sprinkle Parmesan cheese
Place a 2nd row of eggplant slices if you have them
Pour remainder of marinara sauce over the dish
Add mozzarrella cheese
Bake at 375 degrees until cheese begins to brown slightly
You should keep track of your amounts when you make this and divide by # of portions to get net carbs! It was sooooo good!Jennifer

Had the spaghetti squash for the first time tonight. When I was cutting it open and scooping the seeds out I was like "this is so not worth it". Then I nuked it and put it out on my dd and my plate, seasoned it with butter, garlic powder, s&p, and sprinkled with parmesan cheese. "Ahhh this is so Worth it", so delicious, won't hesitate to make again.
So glad I have this board for such good recommendations of new foods to try.

Left overs are also a great thing, if you have any
I've also "stir fried" the spaghetti squash the next day. I cook up chicken chunks, add broccoli and soy sauce, soooo yummy. Okay, so I'm a sucker for left overs the next day.

I also tried the spaghetti squash with some butter and sprinkled with cinnamon like someone suggested. Awesome as an after dinner dessert. Think this is one veggie that I could actually overcarb on though.

Can you use other squashes to substitute spaghetti squash? Can't get that here in Italy
