    Re: Spagetti Squash?

I don't think so. The insides of the spaghetti squash are kind of unique in that when you scrape them out, they look a lot like spaghetti noodles. I don't think other squashes do that so much. Perhaps someone else has an alternative.

      Re: Spagetti Squash?

Cannot help with the alternative to spaghetti squash, but wanted to share this recipe.

I have addapted it from a pasta dish.

      1/4 cup olive oil
      10 garlic cloves, diced
fry garlic in oil until very light in color.
      turn off heat.
add oregano, basil, salt and pepper to taste.

Poor onto cooked spaghetti squash, toss like pasta. *you may not need 1/4 cup olive oil, depends on the amount of squash you have.
Add 1/3 cup parmessan cheese, toss.

Well, there's nothing stopping you from stewing zucchini squash in a little tomato sauce...that's yummy.

              Re: Spagetti Squash?

You can use a vegetable peeler and make "noodles" out of zuccini squash, but they'll be flat noodles instead of spaghetti looking noodles. They work just as well though for using in a pasta like dish.

                  Re: Spagetti Squash?

Sally, I have had orange fleshed spaghetti squash. It looked the same on the outside but the flesh was a definite orange. It stayed more crisp with bigger strings than my yellow fleshed ones.

I have used spaghetti squash in lieu of ramen noodles. Lemme dig up the recipe...

                  Squashy Ramen Noodles

1/2 cup cooked spaghetti squash shredded into threads
                  1/8 cup water
1 cube beef boullion (carb free or very close to it, if using beef broth, omit water and I would use a little extra and reduce it first to deepen flavor)
1 tbsp lemon juice (I used the stuff in the plastic lemon)
                  1/2 tsp sesame oil
                  1/2 tsp chopped garlic
                  1/2 tsp grated ginger
                  1/4 cup chopped bok choy
5 shrimp (I used 31-40s, precooked and cut them into thirds)
                  diced scallions
                  1/2 tbsp soy sauce

Heat water over medium heat adding in boullion, oil, lemon juice, garlic and ginger. Heat the spaghetti squash in the microwave until just hot if it is leftovers. When barely at a simmer toss in your shrimp bits, bok choy and scallions, cook just until hot, don't overcook the shrimp cause they get rubbery quick. Toss with your hot squash and serve immediately.

This made 2 servings for a side dish, I served it with grilled chicken. Mmmmmm... it was nummy. I will definitely be making this again. DH really liked it and he was very skeptical of a new squash.
